After the success of my Instant Pot Vanilla Extract, I caught the bug and knew I had to create more delicious extracts. Today I am making Instant Pot Cinnamon Extract.
Folks, homemade cinnamon extract is something you need in your pantry. It’s perfect for those fall recipes like snickerdoodles and cinnamon rolls. It has soooooo much more cinnamon flavor as compared to cinnamon that comes ground up.
Before making this Instant Pot Cinnamon Extract recipe, please take a moment to read through the safety tips and important information on how to cook with alcohol in the Instant Pot that are included further down in this post.

Instant Pot Cinnamon Extract Materials

- 8 qt Instant Pot.
- I use and love the 8 qt, extra Instant Pot Insert & sealing ring.
- 3 qt Instant Pot or 6 qt Instant Pot depending on family size.
- Cutting board.
- Trivet.
- Measuring jugs or cups.
- Canning jars.
- Storage jars.

How to Make Instant Pot Cinnamon Extract Step by Step
- Divide vodka and cinnamon sticks up evenly into two jars. 1 cup of vodka and 5 cinnamon sticks per jar.
- Seal your jar lids so that they are finger tight.
- Add the water to the Instant Pot insert.
- Place jars on the trivet in the Instant Pot, close the lid and set to high pressure for 30 mins.
- Allow for a Natural Pressure Release of a full 60 mins.
- Remove jars from the Instant Pot with tongs. Let cool completely, remove the cinnamon sticks from liquid and store.
Tips for Making Instant Pot Cinnamon Extract
- Cinnamon sticks need to be completely submerged in the vodka. I made this mistake when testing out Instant Pot Vanilla Extract.
- Using new canning jars is a good idea. If you are worried you could reuse your canning jar a few times before moving on to a new jar.
- You can fit 3-4 canning jars inside your Instant Pot depending on the size of the jar and your Instant Pot.
- Make sure liquid is just below the first jar thread as the liquid needs room to expand.
Two Important Safety Tips for Making Instant Pot Cinnamon Extract
Safety Tip #1: Do not use a stovetop pressure cooker or cook near an open flame.
Safety Tip #2: Do not use a quick pressure release EVER with this recipe. You have to do a full natural pressure release as to not release alcohol vapor into the air. Read more below in “Cooking with Alcohol in the Instant Pot” section for how to safely use alcohol in your pressure cooker.
Cooking with Alcohol in the Instant Pot
I have done some research for you so you can safely make your own homemade cinnamon extract in your Instant Pot. It’s important to follow these directions for your safety.
It’s important to not make the cinnamon extract near an open flame and to not use a stovetop pressure cooker. Since the vapor of the alcohol is flammable it is extremely important to do a full natural pressure release.
Making your homemade cinnamon extract in canning jars with lids will also decrease the amount of alcohol vapors that could be released inside your home.
Your Instant Pot will need to do a natural release for at least an hour. Under no circumstances should you ever do a quick release while making an extract or working with alcohol in your Instant Pot.

How Soon Can You use Your Pressure Cooker Cinnamon Extract?

How Long Can You Store Instant Pot Cinnamon Extract?
I have stored it for 2-3 months so far and it has been OK. I know people have said they stored it for at least 6 months. Others have suggested indefinitely.
The Best Vodka for Homemade Cinnamon Extract
With so many different types of vodkas at different price points, of course you’ll need to know what the best vodka for Instant Pot Cinnamon Extract is. My rule for making extracts is if you’ll drink it in a cocktail you can use it for your Instant Pot Cinnamon Extract. Mid-point priced 80% proof vodkas like Smirnoff and Tito’s are what I use. You can definitely use what you have on hand in your pantry.
Other Alcohol Can You Use For Pressure Cooker Cinnamon Extract
You can use bourbon when creating other extracts for a more smoky flavour and other people I know have used rum too.
I Thought You Were Not Supposed To Can or Seal In The Instant Pot?
It’s not canning or jarring for preservation. You will not get the seal canning requires doing this.
The Best Vodka for Homemade Cinnamon Extract
With so many different types of vodkas at different price points, of course you’ll need to know what the best vodka for Instant Pot Vanilla Extract is. If you’ll drink it in a cocktail you can use it for your Instant Pot Vanilla Extract. Mid-point priced 80% proof vodkas like Smirnoff are what I use.
What Type of Jars to Use for Instant Pot Cinnamon Extract
I have used both Ball and Kilner canning jars (1 cup/250 ml or 2 cups/500 ml) when making Instant Pot Cinnamon Extract. Both companies say their jars are safe for use in the Instant Pot.
I can fit 3-4 in my Instant Pot at a time depending on their size. I would personally use new canning jars. If you have to reuse a canning jar only use twice before swapping them out for a new jar to use in the Instant Pot.
Storage Bottles For Instant Pot Cinnamon Extract
You can use these bottles to store your vanilla extract. They make a great size for gifting too. Simply add some coloured string and a handwritten label.
How To Make Homemade Cinnamon Extract – Traditional Method
No Instant Pot? No problem! Here is how to make Homemade Cinnamon Extract with no heating or special equipment required:
- Divide vodka and cinnamon sticks up evenly into two jars, 1 cup of vodka and 5 cinnamon sticks per jar. Make sure the cinnamon sticks are completely submerged.
- Seal your jar lids and give them a good shake.
- Store them at room temperature and keep out of direct sunlight.
- Continue to shake the jars once or twice a week for 12 weeks.
- The extract is now ready to use.
Differences in Cinnamon
There are two types of cinnamon available for purchase. My American friend had nooooooo idea when I told her Americans use a different type of cinnamon. Here are the differences.
- Cassia cinnamon is imported from China, Vietnam, India and Indonesia and is what you’ll find most commonly in the United States and Canada. Cassia is a deep reddish-brown colour. A piece of hard bark is harvested from the cinnamon tree and then rolled or ground.
- Ceylon cinnamon is imported from Sri Lanka and Madagascar and is found in Europe and Mexico though it is becoming more popular in American stores. Ceylon is a light brown colour and has a sweet floral aroma. Ceylon is harvested from the delicate bark of the interior of a cinnamon tree.

Ingredients
- 10 cinnamon sticks
- 2 cups vodka
- 1 cup water
Instructions
- Divide vodka and cinnamon sticks up evenly into two jars, 1 cup of vodka and 5 cinnamon sticks per jar.
- Seal your jar lids so that they are finger tight.
- Add the water to the Instant Pot insert.
- Place the jars on a trivet inside the Instant Pot. Seal the Instant Pot and set to high pressure for 30 mins.
- Allow for a Natural Pressure Release of a full 60 mins.
- Remove the jars from the Instant Pot with tongs. Let cool completely, remove cinnamon sticks from liquid then store.
