Rice has always been a big part of my family meals. Whether it’s a special occasion or casual weekday meal, rice is one of our go-to dishes.
And this Japanese Hibachi Style Instant Pot Fried Rice recipe is one made at home restaurant quality dish that we keep coming back to again and again. It is perfect with quick to make spicy Kani Salad.
To say that rice is a much loved food in our family is a bit of an understatement. As a kid in Sierra Leone, my family’s Christmas and New Year’s Eve holiday dinner meals always included rice.
Because rice is such an integral component to our meals, I have made it my mission to learn how to make the best rice dishes from all sorts of different cuisines. Especially this which is similar to those cooked in Japanese Hibachi Restaurants.

What Is Hibachi Fried Rice?
Traditionally, the Japanese word hibachi means “fire bowl”. So rice , seafood, meat etc etc are cooked on an very high heat metal plate over a ceramic bowl full of burning charcoal or wood. Luckily we can adapt this recipe to our Instant Pot and we are good to go.

How To Make Instant Pot Fried Rice
- To make your Fried Rice in Instant Pot, start by using a rice strainer to rinse the Jasmine rice until it’s no longer cloudy. Once the water is clear let it drain for 10-15 minutes.
- Add the rice to the Instant Pot with 2 cups of water. Stir, close the lid and point the valve to Sealed.
- Select Manual (or Pressure Cook) and cook on High Pressure for 3 mins.
- When it’s done, allow for a 10 min Natural Pressure Release and then perform a Quick Pressure Release to release the remaining pressure.
- Open the lid, fluff the rice with a fork and transfer it to a bowl.
- Without cleaning the insert, turn on Sauté mode, adjust to Medium setting and add in sesame oil.
- Once the sesame oil begins to sizzle, scrape the bottom of the insert with a heavy spatula or wooden spoon and add in the onion. Sauté the onion in the sesame oil and stir for 1-2 mins. Then add the peas, carrots and corn. Stir to combine it all together.
- Add the butter and cook everything together for about another 2 mins.
- Push the veggies to one side of the pot and add the eggs to the other side.
- Stir the eggs constantly like you’re making scrambled eggs. Once the eggs begins to cook, mix them in with the veggies until fully cooked.
- Cancel Sauté mode and set the Instant Pot heat setting to Keep Warm.
- Add the rice back to the insert with veggies. And add the soy sauce, rice vinegar, sesame seeds and stir to combine.
- Turn off the Instant Pot and serve topped with sesame seeds and chopped green onions.
Recipe Tips
- Cooking time listed does not include the time for the Instant Pot to come up to pressure or for the pressure to release.
- Stir the eggs continuously when cooking so they don’t stick to the bottom of the pot.
- Feel free to swap out the water for broth of your choice.
- This hibachi style rice need the rice to be completely cool for making the fried rice. Day old rice is even better.
- If you’re following a Gluten Free diet, use gluten free Tamari sauce instead of regular soy sauce.
- You can use frozen or fresh vegetables in this recipe.
- Do NOT skip rinsing the rice before cooking, as this removes some of the starch that makes rice sticky. And you don’t want super sticky rice for this Instant Pot Fried Rice recipe.
- Make a big batch and portion in a mixing bowl or two and store in the refigerator.
Make Ahead And Meal Prep

Let the rice cool and store in an air tight container in the refrigerator for up to 3 days.
Freeze –
This Fried Rice in Instant Pot recipe is a great meal prep solution. It’s sooooo easy to freeze to use later. Here’s how:
- Make sure the fried rice is completely cooled.
- Add to an airtight meal prep container or ziploc bag and label.
- Place the bag or container flat in the freezer.
- Your Instant Pot Fried Rice can be kept frozen for up to 3 months.

Can You Use Other Kinds of Rice in Pressure Cooker Fried Rice?
This quick and easy fried rice dish calls for Jasmine rice. But you may not have Jasmine rice on hand, you can use other kinds of rice. Just keep in mind that different varieties of rice may change the cooking time.

Should I Use The Instant Pot Rice Button?
The rice button is for standard white (non-Basmati) rice. For any other type of rice, such as the Jasmine rice in this recipe, you should use the manual button.

Ingredients
Instant Pot Fried Rice Ingredients:
- 2 cups (456g) Jasmine rice rinsed and drained
- 2 cups (500ml) water
- 2 Tbsp sesame oil
- 2 Tbsp soy sauce or gluten-free Tamari sauce
- 1 Tbsp rice vinegar
- 2 Tbsp unsalted butter
- 4 eggs
- 1 onion finely chopped
- 1 cup (128g) frozen peas and carrots mix
- 1 cup (128g) sweet kernel corn
- Sesame seeds for garnish
- Diced green onions for garnish

- To make your Fried Rice in Instant Pot, start by using a rice strainer to rinse the rice until it’s no longer cloudy. Once the water is clear let it drain for 10-15 mins.

- Add the butter and cook everything together for about another 2 mins. Push the veggies to one side of the pot and add the eggs to the other side. Stir the eggs constantly like you’re making scrambled eggs. Once the eggs begins to cook, mix them in with the veggies until fully cooked.
- Cancel Sauté mode and set the Instant Pot heat setting to Keep Warm. Add the rice back to the insert with veggies.
- Add the tamari soy sauce, rice vinegar, some sesame seeds and combine with the veggie-egg mixture. You’re almost done your Instant Pot Fried Rice.
- Now, you can turn off the Instant Pot and serve the fried rice topped with sesame seeds and chopped green onions.
