These Instant Pot Pancake Bites are the perfect on-the-go breakfast bites for those busy mornings. They’re easy to make and are ready to serve your family in about 10 minutes.

Kids love pancakes but sometimes you don’t always have the time to man the griddle or skillet on the stovetop to make everyone pancakes. Insert the magical Instant Pot to fix that problem.
That’s right folks, no flipping needed.
Pancake Bites Instant Pot Style is great for when you want to make a delicious quick breakfast or brunch for everyone with a little pop of fruit in each bite. Think busy school mornings and packed weekends on the go and these bite size pancakes are a great thing.
Like with these Instant Pot Egg Bites, you’ll use your Instant Pot Egg molds to make these bite sized pancakes. This neat little gadget helps with making clean up quick. It’s made of silicone which makes it easy to pop the pancake bites right out.

Chef’s Note–> These are more like a muffin texture than a light, airy and fluffy pancake texture. Baking things in the Instant Pot will give your recipes a slightly different texture than you would get when you bake in the traditional oven or on a griddle or stovetop.
Ingredient Notes
- Flour- just use your favorite brand of all-purpose flour
- Sugar – Use simple granulated sugar
- Baking powder to help this rise a bit
- Salt – use your favorite salt, but if using salted butter then
- Butter – use unsalted melted butter that has been cooled
- Egg – use a large egg at room temperature. You might need to use 2 small eggs instead.
- Milk – this recipe calls for whole milk, but you can use plant based milk if you prefer
- Spices – this recipe gets it flavour from vanilla extract and ground nutmeg.
- Berries – optional add in some fresh berries diced. Do not use frozen blueberries as these may introduce extra water into the batter.
How To Make Instant Pot Pancakes

- Mix together the dry ingredients aka flour, sugar, baking powder and salt in a mixing bowl.
- Add in egg, milk, melted butter and vanilla extract into the dry mixture.
- Whisk the ingredient together until just combined (don’t worry if there are a few lumps in the pancake batter mix).
- Spray or lightly oil two silicone molds and divide the mixture equally into the molds until they are about two-thirds of the way full.
- Add blueberries or other berries into the batter mixture if you are using them.
- Cover the egg mold with the silicone cover and then cover it with aluminum foil around the edges so no condensation can seep into the pancake bites.
- Add 1 1/2 cups of water to the Instant Pot and stack the silicone tray on the trivet and add to the Instant Pot.
- Cover Instant Pot with lid, seal, and set on Pressure Cook or Manual on High pressure for 8 minutes and cook until done.
- Allow the Pressure naturally release for 2-3 minutes then quick release the rest of the pressure.
- Carefully remove the silicone mold trays, discard foil and open.
- Tip the trays over and gently tap the bottom of the mold to remove the bites.
- Serve immediately warm with maple syrup or powdered sugar and a few fresh blueberries.
Note that cook times listed do not include the time it takes for the Instant Pot to come up to pressure, or for the pressure to release.
Recipe Tips
- Use fresh fruit when you can. Frozen fruit will release water when cooking and could cause your pancake bites to be soggy and wet.
- If you only have frozen fruit to use, toss them in flour to help prevent them from running and ruining your breakfast.
- Don’t overfill the molds with pancake mix or fruit. Only use 2-3 small pieces of fruit per bite.
- Serve these immediately while they’re still warm. If they cool down, stick them in the microwave for 60 secs.
- This recipe makes up to 21 bites depending on the size of your molds and the number of add-ins you use.
Recipe Variations
Try adding any of these to your Instant Pot Pancakes:
- Fruit – strawberries, blueberries, blackberries, raspberries, banana bits.
- Extracts – almond extract or lemon extract.
- Citrus – orange or lemon zest.
- Chocolate – white chocolate chips, regular or mini chocolate chip, cocoa powder.
- Meat – crumbled bacon and chicken make great additions when serving these.
Serve your Instant Pot Pancake Bites warm with a drizzle of maple syrup, honey, nutella, butter, nut butters or jams.

How Much Do You Fill the Molds To Make Pancake Bites?
Only fill the molds about two-thirds of the way full, even if you’re adding pieces of fruit. The bites need room to bake and expand. Don’t add more than 2-3 pieces of cut-up fruit to each pancake.
Can You Use Bisquick Or Another Pancake Box Mix?
Yes folks, if you don’t have the time to make this recipe then you can use boxed pancake batter mixes like Bisquick or Kodiak cakes. To make boxed mix even better, you may want to use buttermilk instead of regular milk in your mix. Get my homemade buttermilk recipe if you don’t have any fresh on hand.
Meal Prep and Prep Ahead
Prep Ahead – These Pancake Bites are best served immediately once made and warm. If you prep them ahead of time before serving, make sure to warm them in the microwave for 30-45 secs first. Make a big batch and keep them in the refrigerator in an airtight container for up to 3 days.
Freeze – Follow the handy tips below on how to freeze these.
- Once the bites cool, place them on a cookie sheet in the freezer and freeze for about 5-10 mins. Then they’ll be frozen enough to place in a Ziploc bag, squeeze out all the extra air and seal the bags.
- Label the bags and then lay them flat in the freezer.
- Store in the freezer for 2-3 months.
- To Thaw – Remove them from the freezer the night before needed and let it thaw in the fridge overnight.
Reheat – Simply microwave them for 45-60 seconds and enjoy.
Meal Prep – Double or triple the recipe to use as meal prep ideas for the whole week.

Easy Instant Pot Pancake Bites

- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg

Instructions
- Mix together the flour, sugar, baking powder and salt in a bowl.
- Add in egg, milk, butter and vanilla extract.
- Mix the ingredient together until just combined (don’t worry if there are a few lumps).
- Spray or lightly oil two silicon molds and divide the mixture equally into the molds until they are about two-thirds of the way full.
- Add a few berries into the mixture, if you are using them.
- Cover the silicone tray with the tray cover and then cover it with foil around the edges so no condensation can seep into the breakfast bites.
- Add 1 1/2 cups of water to the Instant Pot and stack the silicon molds on the trivet and add to the Instant Pot.
- Cover Instant Pot with lid, seal, and set on Pressure Cook or Manual on High for 8 mins and cook until done.
- Allow for a Natural Pressure Release for 2-3 mins then perform a quick pressure release to release the rest of the pressure.
