
I would like to think everyone also needs a delicious cozy soup recipe – namely Instant Pot Potato Soup. This is a really lovely soup that is perfect for the cold weather. It’s comforting and warming, creamy and filling, and, as you might guess, very easy to make.
Best of all this warming soup requires only a few everyday pantry staples with almost no effort to whip up. Plus if you don’t have an Instant Pot you can make it on the stove top or in the crockpot too, I give you instructions in the post. #winningalready.
What You Need to Know Before Making Pressure Cooker Potato Soup
- Instant Pot Potato Soup is gluten-free, vegan, and Paleo: It contains no gluten or animal products. Paleo dieters may want to use sweet potatoes instead of white potatoes.
- Cow’s milk can be used: If you don’t follow a dairy-free diet, feel free to use cow’s milk instead of almond milk.
- This Instant Pot soup is perfect for meal prep: It is the perfect ‘make ahead’ soup because it freezes well. (I have two full batches in my freezer – I like to be prepared).

- 8 qt Instant Pot.
- I use and love the 8qt, my extra Instant Pot Insert & sealing ring.
- 3 qt Instant Pot or 6 qt Instant Pot depending on family size.
- Cutting board.
- Knife.
- Spatula.
- Sea Salt Flakes <= amazing salt that makes your food taste good.
- Measuring jugs or cups.
- Measuring teaspoons.
- Hand blender (stick blender).
- Bowls with covers.
- Store leftover soup in these bowls.
- 8 qt Instant Pot.

How to Make Instant Pot Potato Soup
Making this Instant Pot Soup is easy peasy:
- Step 1. Press the ‘Sauté’ button on the Instant Pot. Add the oil when the display reads ‘hot.’
- Step 2. Add the leeks and sauté till soft, about 5 minutes.
- Step 3. Add potatoes and cook for a couple of mins.
- Step 4. Next mix in vegetable broth, nutmeg, and seasoning.
- Step 5. Put the lid on the Instant Pot. Make sure the steam release handle points to ‘sealing.’
- Step 6. Press the ‘Manual’ button and set the timer for 10 mins.
- Step 7. After it’s done, let the pressure release naturally over 10-15 minutes.
- Step 8. Add almond milk and blend soup into a puree with a hand-held blender or pour the soup into a regular blender and blend it there.
- Step 9. Add seasoning and serve in bowls topped with chilli sauce or roasted seeds.
How to Make Slow Cooker Potato Soup
Making potato soup in the crock pot is really easy. And you get to skip the oil and the frying parts.
- Add the leeks, potatoes, stock and spices into a slow cooker.
- Cover and cook on high for 3-4 hours or low for 7- 8 hours.
- When done, puree with an immersion blender or mash with a masher if you want a chunkier soup.
- Mix in the almond milk and serve with desired toppings
Recipe Tips
- Cook time does not include time for the Instant Pot to come up to pressure, or for the pressure to release.
- For a thicker soup reduce the liquid by about a half a cup For a thinner soup add an extra half to one cup of broth.
- You can also make this Vegan Potato Soup with coconut milk if desired.
- If not vegan, feel free to use chicken broth instead of vegetable broth.
- You can swap the potatoes for other options: I photographed this soup with white potatoes, but you can use any potatoes of your choosing, or even other starchy vegetables. Sweet potatoes would substitute well, as would root vegetables.
Why Leeks In This Instant Pot Soup?
I can’t end this post without quickly expressing my love for leeks, a key ingredient in Instant Pot Potato Soup. Here are several reasons why leeks are one of my favourite vegetables:
- They go with nearly everything (except maybe ice cream).
- They’re easy to find in almost every supermarket or greengrocer.
- Preparation only requires washing and chopping.
- Leeks are an excellent source of Vitamin K (very good for you).

Easy Variations And Substitutions
This version is good as is. But if you want to then you can mix and match with a teaspoon or so of different herbs and spices and other vegetables to suit your taste. Other ingredients you can add include;
- Stone House Seasoning.
- Fajita Seasoning.
- Smoked chipotle paste
- Shallots
- Sweet peppers
- Dried oregano
- Milk – You certainly can Instant Pot Potato Soup with milk. Just swap the almond milk for some regular milk instead.
Topping Ideas and More….
One of my favourite things about this Potato Soup in Instant Pot recipe is how super versatile it is. Not only can you make this soup with a huuuge combinations of spices, but you can also garnish it with an unlimited array of toppings.
Here are some of my tried and true toppings options. But feel free to experiment and come up with very your own favourites as well!
- Radish slices
- Roasted chickpeas
- Crispy pumpkin seeds
- Chili sauce
- Crispy fried bacon (Instant Pot Potato Soup with bacon is one of my fav combinations)
- Sour cream
- Cheese
What’s The Best Potato For Potato Soup?
To make Instapot Potato Soup you can use Red Potatoes, Yukon Gold and Russet Potatoes.
Can You Freeze This Soup?
Yes! This vegan soup is super freezer-friendly, which means it is ideally suited for meal prep. Simply whip up a batch (or double or even triple) and then store in the freezer until you’re ready to use. Just follow these easy steps for freezing, thawing and reheating your Instant Pot Potato Soup:
Freeze It
- Let the soup cool down then transfer into these very handy Ziploc freezer bags.
- Squeeze out all the extra air and seal the bags.
- Label the bags and then lay them flat in the freezer.
- Store the soup in the freezer for 3 months.
Thaw It
- Remove the soup from the freezer the night before needed and let it thaw in the fridge.
- For a faster thaw, you can add the bagged soup into a microwave and thaw according to the microwave’s instructions.
- Transfer the thawed soup into a bowl and reheat in a microwave.
- Or transfer the thawed soup into a saucepan and reheat over low to medium heat.
- Do use a stick blender to mix the soup if is separates.
