FAQs
Refrigerator (or freezer) jam differs from shelf-stable jam in that it is not made using the traditional canning process. There is no need to use pectin, no need to sterilize your jars (although you do want them clean), and you can make it quickly and easily.
Because it is not preserved, refrigerator jam needs to be stored in an airtight container inside the fridge. For longer term storage, you can put it in the freezer. If you use jars, make sure to allow some room at the top of the jars for expansion.
You certainly can make Instant Pot jam with frozen strawberries. Simply defrost the berries first, and then add 1 minute to the cooking time.
I have not tried canning it, but since it is only sweetened with minimal maple syrup and does not have tons of refined sugar which helps preserve jam for canning, I am not sure if it would work. Let me know if you try canning it.
Absolutely. Double or triple the ingredients as long as you don’t fill your Instant pot past the maximum fill line and cook for the same amount of time.
Yes, although your jam will not be as sweet and it will not last as long
For this recipe you don’t need to use pectin as this is thickened using Chia seeds.
