What Is Swiss Steak?
Don’t let the name fool you, this Pressure Cooker Swiss Steak has nothing to do with being from Switzerland. A Swiss Steak is called that because of the method in which it’s cooked. You slowly cook your tougher cut of meat, bringing out all the flavor. Then brown it and braise it in a tomato sauce.

Ingredient Notes
- Steak – this recipe uses bottom round steak which is a cheaper tougher cut of steak and perfect for pressure cooking.
- Spices – this easy stew gets its flavors from garlic powder, onion powder, paprika, salt and pepper. Adjust quantities of spices to your taste.
- Onion – you can use white, yellow, or red onions.
- Mushrooms – I used baby mushrooms, but you can use other mushrooms that you have.
- Celery – A great flavor enhancer.
- Broth – for best results and flavor use low sodium beef broth. Vegetable and chicken broth will work too.
- Olive oil – for browning the steak. Use other vegetable oil, sunflower oil, avocado oil too.
- Tomatoes – this uses diced tomatoes but feel free to use crushed tomatoes too.

How To Make Instant Pot Swiss Steak
Get complete ingredients list and instructions from the recipe card below.
- In a shallow bowl, combine the garlic powder, onion powder, paprika, sea salt, and black pepper.
- Season the sliced round steak on both sides with the seasoning mixture.
- Press sauté on the Instant Pot, and when it reads hot, add the oil.
- Once the oil is simmering, brown the steak on both sides, then place on a plate and cover with foil. Work in batches if needed.
- Add the diced onion to the Instant Pot and cook for 1 min. Add the sliced mushrooms and celery, and cook just until slightly soft, stirring occasionally for 2-3 mins.
- Add a third of the beef broth. Using a wooden spoon, scrape the bottom of the pot to deglaze it.
- Press cancel to turn off the sauté mode and add the round steak back to the pot. Add the remaining beef broth and top with the crushed tomatoes. Make sure to NOT stir the tomatoes into the broth.
- Cover with the lid, lock it, turn the valve to sealing position, and pressure cook for 20 minutes. Once cooked, allow for a 10-minute natural pressure release, then do a quick pressure release to remove the remaining pressure.
- Open the lid, remove steak, and place on a large platter. Cover with foil.
- Press sauté and boil the gravy mixture for 10 minutes to thicken it and reduce it.
- Garnish with chopped parsley and serve over mashed cauliflower with the gravy on top.

Make This In A Slow Cooker
- Combine the spices and season the steak.
- Brown steak in a skillet with some oil and remove and add into a slow cooker followed by the remaining ingredients.
- Cook on low for 7-8 hours or on high for 4-5 hours or until the meat is fork tender.
- Serve.
Recipe Tips
- Cooking time does not include time for Instant Pot to come up to pressure or for the pressure to release.
- Make sure to deglaze the pot in step 6 to avoid getting a BURN notice.
- Try using my Best Dang Steak Seasoning on the Swiss Steak in place of the seasonings listed.
- Do NOT mix or stir the tomatoes into the broth as this will cause a BURN notice.
- If not low carb, you can thicken the sauce by using a cornstarch slurry at the end.
Delicious Variations
- Make the Best Dang Steak Seasoning ahead of time and use this seasoning instead of the seasonings listed in the ingredients.
- Other Seasoning Variations: Creole Seasoning and Greek Seasoning
Storage and Meal Prep
This is an ideal meal prep recipe because it can be easily stored in the fridge or freezer until you need it.
- Prep Ahead – Make ahead and refrigerate for up to 3 days in an airtight container.
- Freeze – Follow the handy tips below on how to freeze this. Transfer pulled pork into these convenient freezer bags. Squeeze out all the extra air and seal the bags. Label the bags and then lay them flat in the freezer for up to 3 months.
- Thaw – Defrost overnight in the refrigerator.

FAQs
This Swiss Steak in Instant Pot recipe calls for a tougher cut of meat like bottom round steak. If your market doesn’t have bottom round steak, you can use cube steak or any inexpensive cut of steak you can get that has some fat swirled in.
Round Steak is generally a tougher cut of meat because it’s from the back part of the cow’s hindquarters. The legs muscles and meat are stronger and tougher in that area, leading to a tougher cut of meat.
Swiss Steak is a cut of steak. However, Salisbury Steak is actually ground beef that’s shaped into a patty. Salisbury Steak usually has a beef broth gravy while Instant Pot Swiss Steak has a tasty tomato-based gravy.

OMG! This recipe was delicious! I didn’t have diced tomatoes so I used sun dried in oil and I’m glad I did, added a lot of flavor, definitely be making this again. Would be a great company meal. Thank you!
Instead of steak I used ground sirloin burgers and I added red bell pepper to mine and for the tomato I used diced tomatoes with green chili’s and made homemade mashed potatoes out of the small red & yellow potatoes. It was a hit
20 minutes was not enough pressure, nor was 20 for NR. I posted my concern on an IP group and that was the comment I received from everyone. Based on other Swiss steak recipes, I will now have to agree. I wasted a lot of money and prep time.:(
This recipe brings back so many memories. I can’t wait to make this for my family. Deliciousness.
