Friends, just hear me out. With only a handful of basic pantry ingredients and almost no effort at all, you will have a boneless lamb roast that is incredibly tender, so juicy, and full of seasonal flavour. Never have to fret about dry or tasteless.
And it’s ready in waaaay less time than it takes to cook a whole turkey. Yeap. We’re talking less than 2 hours versus an all-day cooking affair.

How To Cook Lamb Roast
- Preheat the oven to 220 C / 425 F / gas mark 7.
- In a small bowl, combine oil, orange juice, garlic, thyme, allspice, salt and pepper and mix into a paste.
- Place the lamb on a baking tray and rub with the paste, making sure all sides are thoroughly coated.
- Roast in preheated oven for 20 mins.
- Turn the temperature down to 160 C / 320 F, and continue to bake for an additional 16 mins per 500g (for medium), or 20 mins per 500g for lamb that is well done.
- Remove the roast boneless leg of lamb from oven and let it rest for a full 20 mins before slicing.
- Serve and enjoy!

- Feel free to customize the seasonings to suit your taste. Rosemary or oregano are great choices.
- If you prefer, you can swap the orange juice for apple cider or pomegranate juice.
- Make sure you allow the lamb time to fully rest before carving.

- 1.5 kg (3.3 lbs) boneless leg of lamb
- 1 tbsp olive oil
- 1 tbsp orange juice
- 1 tsp minced garlic
- 1 tbsp thyme freshly chopped
- 1-2 tsp ground allspice to taste
- Salt to taste
- Black pepper to taste
Instructions

- Preheat the oven to 220 C / 425 F / gas 7.
- In a small bowl, combine oil, orange juice, garlic, thyme, all spice, salt and pepper and mix into a paste.
- Place the lamb on a baking tray and rub with the paste, making sure all sides are thoroughly coated.
- Roast in preheated oven for 20 mins at 200 C.
- Turn down the temperature to 160 C / 320 F and bake for an
- additional 16 mins per 500g (1.1 lbs) for medium or 20 mins per 500g for lamb that is well done.
- Remove lamb from oven and let it rest for a full 20 mins before slicing.
- Serve and enjoy!
