    How To Make Greek Fries

    1. Preheat oven to 400 degrees F / 200 degrees C / fan-assisted 180 degrees C.
    2. Cut potatoes into fries shapes, and soak them in ice water for 10 minutes.
    3. Drain and pat dry with paper towels then toss with olive oil and seasonings.
    4. Spread out the fried on a baking sheet. 
    5. Bake for 20-30 minutes (depending on size) turning the fried halfway through cooking time.
    6. Transfer to a plate and top with feta, tomato and tzatziki before serving. 

    How To Air Fry This Greek Fry Recipe

    1. Preheat the Air Fryer to 350 degrees F / 180 degrees C, cut potatoes into matchsticks, and soak them in ice water for 10 minutes. 
    2. Dry the potatoes, toss with olive oil and seasonings, then arrange in a single layer in the basket of the air fryer (cooking in two batches if needed).
    3. Cook for 15 to 20 minutes or until golden and crisp, turning halfway through cooking.
    4. Transfer to a plate and top the fries with feta, tomato and tzatziki before serving. 

    Air fryer temperatures can vary depending on the make and model. I recommend starting with less cook time, checking for doneness, then adding more time as needed.

    How To Make in Instant Pot with Air Fryer Lid

    1. Cut, soak and season the fries according to the recipe.
    2. Make sure your Instant Pot is unplugged.
    3. Add the french fries in a single layer to the cooking basket, place the basket over the trivet inside the Instant Pot stainless steel insert. 
    4. Place the Air Fryer Lid over the instant pot and lower the handle.
    5. Plug in the lid and set the temperature to 375 degrees F / 190 degrees C.
    6. Cook for 9 minutes, open and shake the fries, then cook for another 8-10 minutes.
    7. Transfer to a plate, top and serve.

    Prep and Storage

    • Prep – Prepare the fries by soaking and drying the potatoes and coating them with olive oil and seasoning. Freeze until ready to use and then add a few minutes to the cooking time. 
    • Store – These don’t keep well, but who actually has leftover cheese fries anyway?!
    • Freeze – Place the seasoned, uncooked fries on a baking tray in a single layer and place in the freezer. When the fries have frozen, add them to a zip-top bag and store in the freezer until ready to cook.
