Marinated Strawberry Granola Breakfast Bowls {Vegan and Gluten-free}
Hellooooooooooo colourful summer breakfasts.

Aka marinated strawberry granola breakfast bowls that look oh so fun and oh so tasty. Peeps, let’s just take a moment to stop and admire these. Almost too pretty to eat. Almost, being the most important word in that last sentence.
As the summer settles in and days start warm and only get warmer, I find I want more and more quick easy breakfast that mean less time cooking and more time taking advantage of the good weather. Don’t get me wrong, I still love and still make more involved and time consuming breakfast, because I can and the kiddoes demand it and well, I love food.
But there are days when quick and awesome and looks so pretty breakfast are just the thing that is needed. So, enter these marinated strawberry granola breakfast bowls.
There are three things that make these granola breakfast bowls (or brunch or even supper bowls if you are me).
1 the marinated fruits. Strawberries can be really good or just plain ok. Marinating the fruits in a little lemon juice and a small amount of maple syrup (and mint if you prefer) is a sure-fire way to make sure the berries always taste really goooooood.
2 The coconut yoghurt which gives a lovely flavour boost whilst still keeping the granola breakfast bowl diary free and suitable for vegans.
3 And last but not the least – awesome granola. And by awesome granola I mean 100% organic and contains no refined sugars whatsoever raw granola, like you get from the Wilde Nuts team. Marinated strawberry Granola Breakfast Bowls.
Ingredients
For the marinated strawberries:
- 300 g (10.5oz) fruit chopped
- 1.5 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tsp chopped mint
For the granola bowls:
- 600 ml (2.5 cups) coconut yoghurt
- 120 g (4.2oz) granola (I used Wilde Nuts granola)
- Sesame seeds
Instructions
To make the marinated fruit:
- Add the fruits, the maple syrup and the lemon juice into a bowl, mix well, lightly mash a few fruits with a fork, and let them marinate for about 20 mins in the fridge.
Assemble to granola breakfast bowls:
- Assemble the bowls starting with the coconut yoghurt, followed by the granola, fruits and sesame seeds before serving.
