Autumn recipe idea – gluten-free Mexican polenta with bacon.

So it is that time of the year again. That time when I spend quite a lot of time in my head. You know that place where it is all hot, sunny, sandy beaches, blue waters, fruits, cocktails and all that good, good food.

Recently I have been thinking that the ‘in my head place’ might be Mexico. Especially perfect if it came with a side helping of refried beans, sweetcorn and chipotle. So much so that I woke up in the middle of the night to write down the idea of this Mexican polenta with bacon recipe, and even sketch out the photography set up.

The recipe for this Mexican polenta is easy. Fry the best bacon in the world (aka smoky spoiltpig bacon), add in some sweet corn, spring onions, tomatoes and smoky chipotle paste. Add the mix along with some refried beans to some creamy cheesy polenta, bake for a 20 mins and you are done. It is like bacon and Mexican food and polenta heaven in every single mouthful. So, so good. Chek out the video below.

Oh and if you prefer you can get some pre-cooked polenta from the supermarket. Makes this dish even easier to whip up.

Mexican Polenta With Bacon {GF}

Ingredients

For the Polenta

  • 1 L (4 cups) vegetable stock
  • 160 g (5.6oz) polenta
  • 6 tbsp of grated parmesan
  • Salt

For the Mexican Mix

  • 6 slices of bacon diced
  • 4 spring onions sliced
  • 125 g (4.4oz) sweet corn
  • 3 large tomatoes chopped
  • 2 tsp chipotle paste
  • 400 g (14oz) refried beans

Instructions

  • Bring the stock to boil in an oven ready casserole pot.
  • Then slowly add in the polenta whisking all the while till it thickens. Reduce the heat to low and stir for a few minutes with a wooden spoon. Then cover and stir every 8 or so mins until the polenta is cooked. The whole cooking process takes about 45 mins. The polenta is cooked when it is very thick and falls away from the side of the pan. When the polenta is cooked, stir in the cheese before switching off the heat.
  • Preheat the oven to fan-assisted 160C / 180C / 350F / gas 4.
  • Add bacon to a frying pan and cook until done. Mix in the spring onion, sweetcorn and tomatoes and fry for a min. Stir in the chipotle paste and switch off the heat.
  • Top the warm cooked polenta with the refried beans, then the chipotle bacon mix and bake for 15-20 mins in the preheated oven.

  3. Why have I never thought to make polenta Mexican style? I love Mexican flavors and I love polenta. Makes sense to me!

  4. This looks so, so good! I do not know why I never thought to make a Mexican version of polenta. Sometimes I feel like it gets too dry, but I do not see that happening with this one! Looks great!
