Happy Wednesday guys. Today is all about a simple warming Curry. Soooo simple that it does not require any complicated curry pastes and uses just a few common store cupboard or fridge staple ingredients.  Has that got your attention?

Yeap this easy One Pot Cauliflower Curry is a ‘drop everything and make it now’ kind of recipe.  It’s a crazy delicious recipe uncomplicated curry and that is a good, good thing.

Oh an did I say it comes together in less than 20 mins. Effortless eats and quick weeknight suppers is our thing today. And I am always happy to do our thing. Especially when you end up with a restaurant quality curry at home. Bonus that you can tell exactly what you put in it.

I love making this homemade Cauliflower curry in the air fryer as I the cauliflowers florets crisp up at the edges during cooking. However, I will show you how to make it on the stove top too if you prefer that instead.

How to Make Cauliflower Curry in the Air Fryer step-by-step

  1. Preheat air fryer to 375F / 190C
  2. In a large bowl, mix together coconut milk, stock, Garam masala, curry powder, garlic puree, turmeric, salt and pepper
  3. Add in the vegetables and mix till coated.
  4. Transfer to deep dish at least 4-inch side and place in the hot Air Fryer.
  5. Cook for 12-15 mins till cauliflower is cooked, stirring a couple of times during cooking.

How to Make Cauliflower Curry on the Stove Top

  1. In a large bowl, mix together the stock, Garam masala, curry powder, garlic puree, turmeric, salt and pepper
  2. Add in the vegetables and mix till coated.
  3. Transfer to a pot and bring to a boil and then cook over medium heat till the cauliflower is tender (but not mushy).
  4. Stir in the coconut milk and cook till it is heated through. Adjust seasoning and serve.

Easy Cauliflower Curry Recipe Tips

  • Wanted this to be light on calories, so used mix of stock and coconut milk, but you can use a little bit more coconut milk if you prefer.
  • You can easily add more spices or different spices to your taste. Don’t be shy with spices if you like them.
  • Have your very own curry paste that you prefer to use, omit the spices and use that instead. This curry is meant to work for you.

Ingredients

  • 1 cup (240ml) vegetable stock
  • ¾ cup (180ml) light coconut milk
  • 1 ½ tsp garam masala
  • 1 tsp mild curry powder
  • 1 tsp garlic puree
  • ½ tsp turmeric or to your taste
  • Salt
  • 12 oz (350 g) cauliflower florets
  • 1 cup (200g) sweet corn kernels
  • 3 scallions (spring onions), sliced

Toppings

  • 2 tbsp sweet dried cranberries (optional)
  • Lime wedges

Instructions

  • Preheat air fryer to 375F / 190C.

  1. This recipe definately needs some rewriting. Looks like the idea is to mix all, but the veggies, together. Then stir in the veggies and bake.

  2. I agree with JB – No mention of when vegetable stock goes in.
    However, I found adding the veg-stock (tried it twice already) the curry was more a gravy than a sauce; so maybe the veg-stock is an error? Next time I will try without the stock. The cauliflower turned out crispy but the curry is quite mild.

      Can you make this receipe by putting a little oil and tomatoes in an airfryer? ( omitting the stock and coconut milk) I know it woukd be a different receipe but just trying to see if I can do this in an airfryer. Thanks
