People often like to say, ‘Holidays are for family.’
Holidays are also for food.
And fun – holidays are certainly fun.
There is one more ‘F’ that comes to mind when I think about the holidays: frantic.
Frantically running around trying to cook the food so the family can have that fun.
Don’t misunderstand me. I love the holidays more than any other time of the year. Like really, really love. Head-over-heels, madly in love. (Christmas, will you marry me?)
I might say I want to bury my head under my pillow until the sunshine and warmth comes out again, but I wouldn’t dare miss my favourite time of the year.
But holidays, oh, you can be stressful (and frantic). Especially when it comes to meals.
If it were up to me, holiday meals would be methodically planned out to perfection. I would know exactly who wanted what and when and why and I would serve it all to them with a big smile on my face hours before they even thought to ask for it. A girl can dream, can’t she?
I like to think I do a good job planning holiday meals, but I invariably get caught up in the stress of it and make a mistake. I burn something, forget something, or make a mess of something. (Or all three.)
So to make life easier during the holiday season, I try to be prepared with easy-prep meals that taste like I spent hours on them.
I had the chance to do a ‘test run’ of one of these easy-prep holiday meals recently when some lovely friends dropped in during the afternoon. It was one of those ‘oh but we only plan to stay 30 mins’ things that turns into me saying ‘please stay for supper, we’d love to have you.’

How to Make One Pot Asian Rice and Fish
While talking with our guests, into a pot went onions and pepper, then more vegetables, plus rice and chicken stock. Cook till the rice is soft, then into the pot goes The Saucy Fish Co.’s basa fish and sauce. Cook till done and One Pot Asian Rice and Fish is ready to eat.

One Pot Asian Rice and Fish
Ingredients
- 1 tbsp olive oil
- 1 large onion finely diced
- 1 red pepper finely diced
- 0.5 tsp five spice powder
- 100 g cherry tomatoes halved
- 100 g shredded cabbage
- 300 g basmati rice
- 550 ml chicken stock
- 4 basa frozen fillets defrosted
- Asian bbq sauce I used the sauce form The Saucy Fish Co
- Toppings include - toasted sesames seeds avocado, shredded cabbage, spring onions
Instructions
- Heat the olive oil in a pan, over medium heat, add the onion, pepper and cook for 7 mins, stirring occasionally, until the onion softens.
- Add five spice powder, cherry tomatoes, cabbage, rice and stock.
- Cover the pan, and cook over very low heat for 35 mins till the rice is cooked through.
- 10 mins before the rice is done add in the fish and decant sauce over the fish, cover the rice and cook till done.
- Switch off the heat and let sit for 5 mins before topping with sesame seeds, avocado, shredded red cabbage and spring onions.
