
A deliciously different orange and cardamom baked salmon recipe.

If not, then I am here to tell you that you still have time. It’s OK. No need to panic. Trust me 😉
If yes, then welcome to this crazy little corner called, I freaking love everything about December and Christmas. Come in and take a seat.  Like well, hellooooooo it is Christmas. Crazy love it so much that I buy all my Christmas presents in the January sales, so that I have time to wrap, unwrap and rewrap them at least 10 times over the year. The smug feeling that I don’t have to be traipsing through the shops in December – that is just a bonus.
Not only that but I am deep in the Christmas cooking from late summer and I have pretty much tested out my Christmas menu by November. I mean Christmas orange and cranberry thumbprint cookies gone through four rounds of testing (just to make sure you understand) by November – oh all so part of the job.
So yes, when that Christmas menu is all done and dusted, I do a few little gigimathingies, sit back, and relax because  – well Christmas is sorted. Which, last for 1, 2, 3 erm fouuuuuuur days. Because I need to do something else. I just need to cook. The Christmas crazy come right back in. So I start adding to the menu.
So peeps meet my latest addition to my already full and really can’t add anything else Christmas table. Aka the orange and cardamom baked salmon. Yeap, take that lovely piece of salon, mix in some orange zest and cardamom, brush over the salmon bake it in the oven, till it reaches 50C for fluffy, fall apart and melt in your mouth salmon goodness (tip use a really awesome thermometer like the Superfast Thermapen 4, it is so worth it). And bam that is it. Heck you can make it the night before and serve it cold the following day for brunch or something. We, (you and I) got this Christmas thing down to a T.

Orange and Cardamom Baked Salmon
Ingredients
- 500 g salmon
- 3 tbsp orange juice
- 1.5 tbsp maple syrup
- 0.25 tsp orange zest
- 0.25 tsp ground cardamom
- 500 g salmon
- Salt
Instructions
- Preheat oven to fan-assisted 180C / 200c / 400F / gas 4.
- In a small bowl, mix together the orange juice, maple syrup, orange zest and cardamom.
- Put salmon skin side down in an oven tray and brush the orange and cardamom mixture over the salmon.
- Bake the salmon for 10-15 mins.
- Test the salmon with a thermometer for doneness - 50C for rare and 63C for well done.
