I am on holidays with the kiddoes this week. Trying to pack in as many things as possible before school starts next week.
I see so many fun things in the days ahead; sleepovers with the cousins, museum visits, boating, café breakfasts (these are a treat), pebble skimming, beach hanging, going on a bear hunt and much much more.
I figured that as I am off having fun, I should also share this fun and colourful overnight coconut oats with mango. Because I am nice like that :).

How to Make Overnight Mango Coconut Oats
These vegan oats, take all of 2 mins to whip up and store in the fridge overnight. They make the perfect breakfast for those busy morning as all I have to do is take them out of the fridge, mix in an endless combination of flavours, find a little spot and just dig in.
In this case, I added in a whole heaping of mango puree, almond nuts and strawberries. Simple, tasty and easy.

- 45 g (0.5 cup) gluten-free oats
- 80 ml (0.4 cup) coconut milk
- 1 tbsp maple syrup
- 3 tbsp mango puree
- Handful of nuts
- Half a banana sliced
- Handful of berries
- Mix together the oats, coconut milk and maple syrup in a bowl, cover and refrigerate overnight.
- Remove the oats from the fridge in the morning, and mix in the mango puree, nuts, banana and berries.
