One of my best friends B is moving with her young family back to Sierra Leone.
I am super excited for her as her family have been offered a fab career opportunity. She will also get to be near her very supportive parents and friends all with children of similar ages. Plus the lucky girl gets to live right on the beach (yeap) and eat yum Sierra Leonean food including sweet, freshly picked fruit each day.
I will be very sad to loose her and my god daughter. I am going to be missing our endless gassing on the phone, our bargain hunting shopping trips, our everyday recipe discussions and our lovely girly spa breaks.
But she has a little while yet before the move and so over the next few months we plan to have fun, fun, fun. One of the things we are going to do is a makeover photo shoot we found via good old groupon. We are going to be glamming it up with some bubbly, a facial, a manicure, some hair styling and a whole load of outfit changes during a 6 hr magazine style photo shoot. Angelina Jolie, you ain’t got nothing on us.
To prepare for our photo shoot experience we figure we should eat a bit healthy so we have been chowing down on this peach and Parma ham salad. The sweet peaches work really well with the slightly salty Parma ham and sharp balsamic vinaigrette. Better still it takes only about 5 minutes to prepare and can be endlessly tweaked with all the things you like. Nuts, cheese, you name it and it can be in this. This salad is perfect for summer and for using up your piles of peaches and when served with a side of Bellini cocktails it spices up every single bbq.

Peach and Ham Salad
Ingredients
- 3 large handfuls of mixed salad leaves
- 2 ripe peaches
- 4 thin slices of Parma ham or prosciutto
- Optional extras - toasted nuts cheese etc
- Balsamic Vinaigrette
Instructions
- Add salad leaves into a bowl.
- Halve and remove stone from peaches and cut into bite sized wedges and add to bowl.
- Tear the Parma ham into bite sized pieces and add to bowl along with any extras and toss well.
- Drizzle on some balsamic vinaigrette and serve with some crusty bread.
