I am in my Christmas practise mode, aka work out what easy peasy recipes I am going to
It is a refreshing, fun and festive cocktail that can be served all year round whatever the occasion. And despite being so easy to whip up, it is elegant so you can pull it out whenever you want.
So, this Pomegranate Peach Bellini has:
Let’s talk about the very accessible, everyday things that make this simple Pomegranate Peach Bellini.
- Some obligatory champagne (although any sparkling wine would do)
- Peach Nectar – the sweeter the better
- A bit of diet lemonade –
- Fruit – aka slices of peaches and sprinkles of ruby red pomegranate seed (so, so pretty). Feel free to add other fruits to your taste.
Now let’s talk easy cocktails. Normally you would start with fresh peaches, pureeing them first before making up the Bellini. However, we could all use a few more easier recipes in our lives. Especially the ‘it takes 1 min to whip up this decadent fruity cocktail that looks like you took forever to whip up recipes’.
So, let’s cheat, but in a good way. We grab our favourite peach nectar and we build our cocktail from that. It tastes just as good as the fresh peach puree version. #winningalready
Also, let’s talk ‘healthier’ cocktails. Adding a little diet lemonade not only bulks out the recipe but also lowers the sugar and alcohol content. Plus a lot of champagne cocktails are lower in alcohol and calories anyway so perfect if we are looking to drink in fewer calories. Yeap this low carb cocktail is one that will be on repeeat all year long.
