Tips for Making Prosciutto Wrapped Chicken

  • Double the recipe if you’re looking to feed a crowd.
  • Always cook chicken to an internal temperature of 74C (165F). Add extra cook time if your chicken breasts are thicker.
  • You can make the chicken breasts in your Instant Pot and finish up in the oven. You can take frozen chicken breasts and cook them in no time with your Instant Pot. Check out my Instant Pot Chicken Breast recipe if you’re cooking from frozen. Once the chicken breasts are cooled, slice into and follow the recipe below. Place in oven until mozzarella cheese is melted.
  • There is some prep work involved with slicing the chicken and cutting the vegetables. If you’re feeding a crowd or have some time before the dinner rush, you can slice ahead of time and place in the fridge for use later that day.

You can easily customise this Prosciutto Wrapped Chicken to suit your liking.

  • Easily swap out the asparagus and tomatoes out for long stem broccoli and zucchini.
