Happy Halloween everyone.
Which means these scrumptious pumpkin pancakes and a big old pumpkin smoothie for breakfast.
It means trying not to go pumpkin crazy for the rest of the day.
It means pumpkins carving contests with (sometimes scary) grinning faces shinning out lights everywhere.
It means spiders, webs, wriggly worms, cats, bats, ghoulish stickers, tattoos and cookies – orange and black everywhere.
It means trick or treating with the coolest spookiest outfits in town.
It means scaring everyone witless when taking them for a moonlight walk to the churchyard with the tree that looks like a scary old man.
It means mountains and mountains and mountains of sweet treats some of which I have to hide from mini chefs later on.
But for now, I am going to top my still warm fluffy pancakes with some syrup and walnuts, find me a corner to sit in and just well, enjoy.

Pumpkin pie smoothie.
Curried pumpkin soup.
- 115 g (1 cup) plain flour
- 1 1/2 tsp baking powder
- 1/4 tsp sodium bicarbonate baking soda
- 1 tsp ground cinnamon
- 1/4 tsp grated nutmeg
- 1/4 tsp ground ginger
- 1 tbsp brown sugar
- Pinch of salt
- 2 eggs
- 160 ml milk
- 12 tbsp pumpkin puree
In a large bowl add flour, baking powder, sodium bicarbonate, cinnamon, nutmeg, ginger, sugar and salt and mix.
In another bowl combine the eggs, milk and pumpkin puree and mix thoroughly.
Add the dry ingredients to the wet ones and mix until they are just combined.
You will be left with a thick batter. It does not matter if there are a few lumps in the batter.
Heat a non stick frying pan over medium heat.
Melt the tiniest knob of butter in frying pan and add in a ladle of batter at a time.
Cook the pancakes for a couple of minutes and when the top starts bubbling then turn over and cook the other side till it is set.
Continue until all the batter is done.
Serve with maple syrup, nuts or any other toppings that you prefer.
Play around with the combination of spices to suit your taste.
