How To Pickle Radishes
- Wash the radishes and remove the greens.
- Slice radishes thinly using a mandoline or sharp knife.
- Pour white vinegar and sugar in a mixing bowl and mix until sugar dissolves.
- In a clean mason jar, add sliced radishes, garlic, and bay leaves.
- Top with the vinegar mixture.
- Close the jar and give it a good shake.
- Store in refrigerator. The radishes are ready after 2 hours.

Recipe Tips
- These quick pickled radishes are ready in 2 hours. However, the onions and garlic are added for flavor and will not be ready in 2 hours, so if you do want to eat the onion/garlic do so after 16 hours.
- Make sure to use a mandoline or sharp knife to make cutting the radishes easier.
- Cut radishes in thin slices, this helps them soften up so they can absorb the vinegar faster.
- Store radishes in glass mason jars because plastics can absorb the flavorings and metal containers can react with the vinegar from the pickling process.
Recipe Variations
The great thing about this quick pickled radish recipe is that it is super adaptable. You can easily make different flavor variations by using different vinegar and changing the spices and seasonings. Here are just a few suggestions to get you started:
- Halve the radishes instead. Cut them in half instead of slices and pickled them. They will however take 24 hours to be ready.
- Change up the vinegar: apple cider vinegar, rice vinegar, white wine vinegar, red wine vinegar. note: aged or concentrated vinegar (like balsamic or malt vinegar) won’t work for pickling
- Change up the sweeteners: honey, maple syrup, raw sugar, stevia, other sugar substitutes, such as Swerve or Erythritol. Note: you also can omit the sweetener altogether!
- Add extra spices and seasonings: dill, oregano, basil, bay leaves, fresh sliced ginger, red pepper flakes, peppercorns, cilantro, extra jalapeño.

Meal Prep
While this recipe makes a decent amount in your mason jar, you can easily double or triple this recipe if feeding a crowd.
I recommend that you make this before you’re planning to use them to allow enough time.

Stored properly in an airtight container they can last up to two weeks in the refrigerator. They can actually last a little longer but they will start to lose the flavoring.

Easy Quick Pickled Radishes
Ingredients
- 1 bunch of radishes sliced
- 1 cup (250 milliliter) white vinegar
- 1/4 cup (25 grams) onion sliced
- 2 tablespoon brown sugar
- 3 dried bay leaves
- 4 whole peeled garlic cloves
- 375 ml (12oz) mason jar
Instructions
- In a clean jar, add onions, garlic, bay leaves.
- Cover with vinegar and then add the brown sugar.
- Close the jar and give it a good shake.
- Store in the refrigerator. They’ll be done pickling and ready to enjoy in about 2 hours.

Found this same recipe from marcomama searching the internet not on Pinterest; this person called Middle Eastern ready in 6 hours and keeps in the fridge for 3 months, but best it eat in less time because the radish doesn’t stay as crisp and fresh.

I really want to make these but feel ill prepared to attempt for two reasons: I need to know what size Mason jar for the batch is pictured and/or recommended; AND, as a fan too of Maldon Sea Salt Flakes myself, even though I read and re-read (twice more) your recipe and instructions, I did not find How Much Salt? to include in the pickling mixture. Please help us all who must share these very same questions. Thank You!!
