I’ve got something super easy and fun for you today folks. And it has to do with the rainbow. And fruits, lots and lots and lots of gorgeous sweet juicy fruit along with one other easy to get ingredients. Aka this simple Rainbow Popsicle recipe. #funandthensome

These 2 ingredient homemade popsicles are really one of the easiest desserts to serve. They add an amazing pop of color at any occasion and since they can be made ahead – they are great for cooling down during busy gatherings, BBQs, backyard and pool parties, kids parties when you want to pull out something spectacular.

Kids can make these healthier colorful popsicles by themselves as this fruity recipe is truly that easy folks. No waiting for hours for each separate rainbow layer to freeze. No blending 25 million layers and no dyes or artificial colouring used. #awesomeright?

You can make this with store bought lemonade or lemon soda (I prefer the clear sugar free version) or even homemade lemonade if you prefer.

How To Make Rainbow Popsicles

  1. Add the fruit in layers inside the silicone popsicle mold.
  2. Top with lemonade or lemon soda till mold is about four-fifths full.
  3. Cover the popsicle mold with its cover and insert the popsicle sticks.
  4. Freezer for a minimum of 6 hours, or until frozen solid.

Rainbow Ice Lollies Tips

  • You can use fresh or frozen fruit.
  • Make sure your fruit is diced small enough to fit inside your popsicle mold.
  • Push the fruit down slightly into the mold so you can fit more in.
  • Silicone molds are the best as you can remove the popsicles easier.
  • When adding the lemonade or soda, allow for the bubbles to settle before continuing pouring in.
  • Make sure to fill the molds only about four-fifths full, as the popsicles will expand during freezing.
  • Feel free to swap out fruit choices with different colorful fruits, depending on what you have on hand. 
  • Chill or even freeze your fruit pieces first, so that the popsicles will stay colder longer.

Prep Ahead and Storage

Prep Ahead – This is a great dessert to prep ahead and then pull out when needed. They need at least 6 hours to freeze, so a tip is to set them up the night before you need them.

Storage – You can store these Ice Lollies in the freezer for up to 3 months with no problem at all.

Homemade Popsicle Recipe Variations

While this version is one of my favorite colorful popsicle recipes, I have created many other versions based on what I have available and what guests might like. 

  • Change the liquid: use ginger ale, sprite, lime soda, or apple juice.
  • Change the fruit: grapes, mangoes, blackberries, strawberries, etc. The more color, the better.
  • Or make it sweet: swap out the fruit for colorful gummy bears or candy sours strips.

  • 3 cups (709 mililiters) sugar free lemonade or diet lemon soda
  • 2 1/2 cups (438 grams) of diced fruit
