This two ingredient rainbow popsicle recipe is the perfect frozen treat for all your summertime events. Bursting with are tons of fruit flavor, rainbow ice popsicles are so easy, kids can even make it themselves!

Our Rainbow Popsicles recipe is effortlessly made using sugar-free lemonade and fresh fruit. These popsicles offer a burst of color and flavor without the guilt, making them a perfect treat for a hot summer day or any occasion.

These 2 ingredient rainbow ice popsicles are really one of the easiest desserts to make and serve. They are loaded with fresh fruit for an amazing pop of color and the lemonade provides a tartness that’s refreshing and balances the sweetness of the fruit.

Forget complicated recipes and intricate techniques. Kids can make these healthier colorful popsicles by themselves without dyes or artificial coloring. And, since they can be made ahead like my Watermelon Popsicles or Chocolate Popsicles – they are great for cooling down during busy gatherings, BBQs, backyard and pool parties, kids’ parties when you want to pull out something spectacular.

Ingredient Notes

  • Lemonade – I used a sugar free prepared lemonade but you can use homemade lemonade, real sugar lemonade and even lemon soda.
  • Fresh Fruit – Use a variety of fresh fruits for that rainbow effect. Kiwi, blueberries, raspberries, cherries and pineapple are a great starting point.

How To Make Rainbow Popsicles

Get the complete ingredients list and instructions from the recipe card below.

  1. Add the fruit in layers inside the silicone popsicle mold.
  2. Top with lemonade or lemon soda until the mold is about four-fifths full.
  3. Cover the popsicle mold with its cover and insert popsicle sticks.
  4. Freezer for a minimum of 6 hours, or until frozen solid.

Expert Tips

  • You can use fresh or frozen fruit.
  • Make sure your fruit is diced small enough to fit inside your popsicle mold.
  • Push the fruit down slightly into the mold so you can fit more in.
  • Silicone molds are the best as you can remove the popsicles easier.
  • When adding the lemonade or soda, allow for the bubbles to settle before continuing to pour in.
  • Make sure to fill the molds only about four-fifths full, as the popsicles will expand during freezing.
  • Feel free to swap out fruit choices with different colorful fruits, depending on what you have on hand. 
  • You can use dixie cups and a popsicle stick if you don’t have a popsicle mold.
  • Chill or even freeze your fruit pieces first, so that the popsicles will stay colder longer.
  • Give the rainbow pops ample time to freeze. Refrigerate the homemade popsicles overnight.
  • If you encounter difficulty removing the popsicles, briefly run the mold under warm water to loosen them.

Delicious Variations

  • Swap the fruit – Mix and match the fruit to include seasonal options or your favorite fruits. Coconut milk or coconut cream are yummy too.
  • Swap the liquid – We used sugar free lemonade but you can easily use regular lemonade, fruit juice or soda.
  • Add fresh herbs – Fresh herbs like mint can add an extra layer of flavor.

Prep and Storage

  • Prep Ahead – This is a great dessert to prep ahead and then pull out when needed. They need at least 6 hours to freeze, so a tip is to set them up the night before you need them.
  • Storage – You can store these Ice Lollies in the freezer for up to 3 months with no problem at all.

How long does it take for popsicles to freeze?

The freezing time can vary, but plan to allow them to freeze for at least 8 to 24 hours.

Do I need special popsicle molds?

Popsicle molds are recommended for a uniform shape and easy removal. I prefer to use the silicone molds.

Can I store popsicles for an extended period?

While these rainbow pops are best enjoyed fresh, you can store them in an airtight container in the freezer for up to a few weeks. However, for optimal taste and texture, it’s recommended to consume them within the first week.
