This Rainbow Hummus Veggie Wrap is quick, tasty, easy and made exclusively by the mini chefs. The kiddoes had such fun slicing up the crunchy vegetables, wrapping the tortillas before eating them. I may have joined in too.

I predict a whole load of colourful Tortilla Wrap in our lives over the next few months and I can’t wait.

How To Make Veggie Wraps

Making these Veggie Tortilla Wraps is super easy. Gather all your ingredients and then…..

  1. Slice all your veggies (kids love helping with this, just be careful with sharp knives)
  2. Spread out the tortilla wraps and add on as much of each vegetable as you would like.
  3. Top with a generous dollop of the hummus and wrap the tortillas and serve.

Hummus Veggie Wrap Recipe Tips

  • Use Corn Tortillas to keep these gluten-free. But if not an issue, then use any other wraps you prefer.
  • Other vegan dips you can use instead include this Olive Oil and Beetroot Hummus or this Zucchini Dip.
  • Make sure the veggies are as dry as possible as wet veggies will result in soggy wraps.
  • You can have bigger cut veggies for more of a crunch or smaller grated veggies instead.
  • Cutting the vegetables into batons or shredding them will make it easier to assemble the wraps.
  • You can swap in other vegetables to your taste – see some ideas below.

Veggie Wraps Variations

You can mix and match and add in any veggies you like. You just bear in mind that if you are prepping these ahead then you might want to avoid some vegetables like tomatoes will make the wrap go soggy. Some options include

Rainbow Hummus Veggie Wrap

A quick easy crunchy rainbow vegetable tortilla wrap that can be made with your kids.

Ingredients

  • 2 carrots, cut into battons
  • 150 g (5.2 oz) red cabbage, sliced
  • 1 red (bell) pepper
  • 1 orange (bell) pepper, deseeded and sliced
  • handful of spinach leaves (or other greens)
  • Handful of chives or lettuce leaves
  • 8 corn tortillas (gluten free)
  • 200g hummus

Instructions

  • Make the tortilla wrap:
  • Spread out the tortilla wraps and add on as much of each vegetable as you would like.
  • Top with a generous dollop of the hummus and wrap the tortillas and serve.

Notes

Please supervise your kids carefully when using they use the grater or knife. The vegetables can also be grated and sliced in a food processor using the grater or slicer attachment. Kids love switching the food processor on and off when doing this.

  7. They look great. We all had wraps with hummus, falafel and salad last night. Cooper wasn’t very impressed. So when we had wraps again tonight, this time with veggie sausages, fried onions and roast peppers, he bowed out and had a cheese omelette and salad instead. However he did cut his carrot and cucumber himself and make his own omelette. I just flipped it for him. Not bad for a 4 year old.

    1. It can be quite weird the things they like or don’t like. My eldest likes omelettes but thinks that they are some strange pancake.

    What an excellent idea! My eldest would love this. We eat fajitas a lot at home, but he insists to make them with vegetables instead of the chicken!
