I just HAD to post this Raspberry Mojito recipe before I go away. A friend of mine has very kindly (and to my utter astonishment) agreed to take BOTH my kids for a day and a half. Yes, peeps, a whole day and a half.

This translates to finding the nearest nicest hotel I can afford with a swimming pool and everything, booking a night away with a three-course dinner, breakfast, and cream tea on arrival. And of course, recipe testing cocktails for you.
