This quick roast pork tenderloin fillet flavoured with orange juice and honey and served up with golden polenta chips makes a great lunchbox idea.
I decided to surprise Freddy at lunch last week.
Which essentially meant, taking him whatever I had left in the fridge. So the polenta became golden crispy on the outside polenta chips. And 30 mins later the marinated pork tenderloin became gorgeous slices of orange and honey roasted pork fillet.
All wrapped up in some white greaseproof paper and string with a side of sweet chilli dipping sauce – lunch, totally sorted.
This is the second recipe in my pantry staple spotlight on polenta. Please be sure to check the other polenta recipe out.
