
This rocket hummus (arugula hummus) is an easy but tasty summer treat suitable for vegans.
One of the many things I love about the summer is the abundance of herbs, greens and the many other veg that we have access to. I am very good at drawing up plans as to what herbs and veg go where. Freddy is very good at bringing those plans to life. Perfect as we are trying to incorporate more fresh vegetables into our diet as well as follow a healthier diet.
This year along with courgettes, we have a huge abundance of rocket (arugula). I love love love adding rocket to salads, pasta, sandwiches and soups. And to change things up a little, I have been whipping up this rocket hummus. It makes such an easy weeknight supper or quick impromptu lunch especially if like me, chickpeas are a pantry staple. It is easy on the wallet, full of protein from the chickpeas, uses up left over rocket (or other greens) and is suitable for vegans.
I tend to serve this with some pitta or crusty bread, a few tomatoes and loads of toasted seeds. Works a treat.

Rocket Hummus and Redmond SkyScales Review
Ingredients
- 400 g (14oz) tin chickpeas drained and rinsed
- 5 tbsp olive oil
- 4 tbsp water
- Juice from 1.5 lemons
- 1.5 tbsp light tahini
- 60 g (2oz) rocket arugula
Instructions
- Add all the ingredients in a food processor and whizz into a paste.
- Check for seasoning and add extra lemon juice if necessary.
- Transfer into a dish and top with some toasted seeds and salad cress and serve
