It is so easy to whip up this raw colourful vegan shaved cauliflower and orange salad with an orange tahini dressing.
So Father’s day this year was pretty simple.
Freddy and the girls put up their brand new, apparently waterproof (but this sceptical African is not quite sure) tent in the garden.
Then we all then hung out counting dragonflies (they turn into fairies don’t you know), Freddy made some beer in his brand new fancy homebrew machine thingy and the girls cycled between grandpa and ours to give an updated tally for every single dragonfly fairy they saw. Simple yet perfect.
I decided to whip up a simple lunch to go with our simple day too. AKA this orange and shaved cauliflower salad with an orange tahini dressing. I love love love the soft crunchiness of the cauliflower along with the walnuts. And if like me you have pomegranate seeds as a pantry staple, you would add them to everything including this salad right?
The orange tahini dressing is really flavourful. Its slightly sharp but creamy taste works well with the cauliflower and greens. It is one of my go to diary free but oh so creamy vegan dressings.
I am relatively new to shaved cauliflower salads peeps and boy have I been making up for it. I am talking shaved cauliflower slaw, shaved cauliflower and apple salad and shaved cauliflower everything. I have a feeling that I will be sharing a lot more said salads with you.

Shaved Cauliflower And Orange Salad With An Orange Tahini Dressing - Vegan
For the shaved cauliflower and orange salad:
- 300 g (10.5oz) raw cauliflower florets
- 100 g 3.5oz) mixed salad leaves
- 2 large oranges peeled pithed and sliced
- 5 tbsp pomegranate seeds
- 3 tbsp chopped walnuts
For the orange tahini salad dressing:
- 4 tbsp light tahini
- 4 tbsp orange juice
- 4 tbsp lemon juice
- Salt to taste
- Thinly slice the cauliflower florets using a mandolin or with the slicing attachment of a food processor. Discard all the really tiny bits of the cauliflower and keep the slices.
- Make the orange tahini salad dressing by whisking together all the ingredients in a bowl and setting aside.
- Assemble the salad staring with the mixed leaves, then add the cauliflower, the oranges, seeds and nuts and drizzle on the salad dressing.
