I love autumn / fall. The part where the leaves change colour, mornings are fresh and crisp, the slow cooker simmers away and nights are spent wrapped up in front of the fire with hearty soups and a good book.
I recently acquired a massive amount of tomato products (thank you, neighbour, who is moving and doesn’t want to move all her pantry goods). Think chopped tomatoes, tomato fillets, garlic salsina, and some thick rich passata that got the mini chefs demanding a pizza night with my Homemade Italian Pizza Dough Recipe.
So naturally, I decided the first recipe would be this Crockpot Tomato Soup (just to show that I am the boss). Pizza was the very next night.
The vegan tomato soup became something that was all about gorgeous tomatoes rather than anything else. It has just 7 everyday ingredients and is a dump and go recipe, so requires very little effort to make. Great for busy weeknights and the fact that it is a low carb tomato soup that is rich and smooth, that goes down fast is a plus in my book.

How To Make Slow Cooker Tomato Soup
Step 1. Add all the ingredients into the slow cooker and mix.
Step 2. Cover and cook on high for 4 hours.
Step 3. You can serve the soup like this if you prefer a chunky soup.
Step 4. Allow the tomato sound to cool for a little while and then puree with a hand-held blender, adjust seasoning and serve.
Vegan Tomato Soup Tips
- Cut your cauliflower up into small pieces so that it cooks.
- If not low carb then you can use butternut squash instead of cauliflower.
- Feel free to add in extra spices like chilli and cinnamon.
What to Serve with Slow Cooker Curried Tomato Soup
Slow Cooker Curried Tomato Soup is good on its own but if you want to bulk out your meal, it goes extremely well with some of the below
- Cauliflower rice (to keep it low carb).
- Jasmine rice (follow my Instant Pot Rice recipe).
- Air Fryer Grilled Cheese if not vegan.
- Roasted Cashews .
PS OH actually packed some soup for his lunch the following day. Taking something as potentially messy as soup in a lunch box means a big thumbs up from him.
Vegan Tomato Soup With Basil
It is easy to make this a Vegan Tomato Soup with basil. Simply add a large handful of basil, and change the curry powder for some mixed herbs and you are good to go.
Vegan Tomato Soup With Coconut Milk
You can easily make this a Vegan Tomato Soup With Coconut Milk. Just add about half a cup (120 mls) coconut milk in at the end of cooking just before you blend it. Use either half fat or full fat according to your preference. You can also add some other plant milk according to your taste.

Slow Cooker Curried Tomato Soup
- 28 0z (800g) fresh chopped tomatoes (used tinned if that is what you have)
- 1/5 cups (150 g) cauliflower florets
- 4 scallion (spring onions), finely chopped
- 1.5 tbsp mild curry powder
- 1 tsp ginger puree
- 1 tsp garlic puree
- 2 cups (500 ml) warm vegetable stock
- optional - salt and chilli flakes
- Add all the ingredients into the slow cooker and mix.
- Cover and cook on high for 3 hours.
- You can serve the soup like this if you prefer a chunky soup.
- Allow the tomato sound to cool for a little while and then puree with a hand-held blender, adjust seasoning and serve.
