Ingredient Notes
- Tomatoes – In the summer, you can use fresh tomatoes if available. Otherwise, use canned tomatoes that are whole plum or crushed tomatoes as you have.
- Cauliflower – adds creaminess and bulk with only a few extra calories. Cut florets up small so they cook.
- Green onions – or spring onions, add onion flavor without the cooking time associated with onions. Feel free to use onion powder instead.
- Veggie Broth – use homemade or store-bought vegetable broth, but you can swap it with chicken broth if not vegan.
- Balsamic vinegar – the secret ingredient that adds a richness of flavor to the soup. Try not to skip this.
- Seasoning – minced garlic and Italian seasoning add great flavor to this soup. Of course, you can add more or less to your taste and sway Italian seasoning for some dried oregano instead.
- Coconut milk – this is coconut milk from a tin. If you are not vegan, you can use heavy cream instead.

FAQs
Yes, you can make this with non-diary cream. Just add about half a cup (120 ml) of coconut cream or other non-dairy cream of your choice at the end of cooking just before you blend it.
Use either half-fat or full-fat according to your preference. You can also add some other plant milk according to your taste.
Yes, you can use tomato soup as a substitute for tomato sauce in certain recipes, but it might slightly alter the texture and flavor of the dish. Tomato soup generally contains more liquid and is less concentrated than tomato sauce.
Tomato soup can be thickened using various methods, including incorporating ingredients such as heavy cream, half-and-half, sour cream, or cashew cream.
Additionally, using tomato paste, blending in cooked vegetables, or adding a roux made from butter and flour are also effective ways to achieve a thicker consistency.
Cooking soup for too long in your slow cooker can result in the ingredients becoming overly soft and losing their texture.
Following the recommended cooking times is essential to ensure your soup retains its delicious flavors and desired consistency.
In most cases, avoiding stirring soup in the slow cooker is recommended. Keeping the lid on helps maintain the desired temperature and cooking time.
However, there might be specific recipes that require stirring occasionally.
Always follow the instructions provided in the recipe for the best outcome.

Excellent and easy to make. I sauteed chopped onions and garlic in a pan to caramelize it a bit before adding. The family approved this recipe, it’s definitely a keeper!
I love coconut and tomatoes so together yummy.
Sounds like an amazing recipe and can’t wait to try it. Can I substitute the coconut milk for anything else though? What about soy milk ? Unfortunately coconut milk didn’t come into my budget this week ahah
