I absolutely looooove tomatoes and there’s nothing like a fresh tomato salad, creamy tomato soup, tomato pasta sauce, shakshouk, fried tomatoes, and baked tomatoes. Then there are these slow roasted tomatoes that make a fabulous but simple summer dinner or lunch when served with some Air Fryer Green Beans and some really crusty bread.
Quicker To Make?
I mostly do still fry tomatoes as this is a lot quicker. However, when time permits, I throw them in the oven and cook them slowly in their own juices until they are just perfect.
These Air Fryer Slow Roasted Tomatoes (yes we make them in the air fryer too) taste delicious along with the whole roasted garlic and make a delicious appetizer, side dish, or main meal add-in. And feel free to add a pinch of sugar or sweetener to make these a little bit sweeter.
Why Slow Roast Tomatoes
Slow-roasting tomatoes really concentrates their flavor with a little bit of juiciness on the inside, yet a bit dryer chewier outside (much juicier than sun dried tomatoes). If you are short on time then do a quicker oven roast.
Why Make This Recipe
- Great way to use up your summer tomato bounty.
- Easy way to add flavor to bland tomatoes.
- They are beyond simple to prep and cook.
- Budget-friendly – made with affordable ingredients you already own.
- Dietary – suitable for vegan, gluten free, low carb, and keto diets.
Ingredient Notes
- Tomatoes – I tend to make this with a mixture of grape and cherry tomatoes as they cook up quicker, but you can use larger tomatoes like Beefsteak tomatoes, Romas, etc. Just add a bit more cooking time. Use a range of colors for a stunning effect.
- Oil – Use good olive oil as you want to dip into that oil afterward.
- Garlic – Use whole garlic cloves. You can easily squeeze that flavored roasted garlic onto some pasta or bread after roasting.
- Salt – Salt completes this, but only add a little as the flavor of the tomatoes is highly concentrated at the end.

Recipe Tips And Variations
- You are aiming for shriveled and dry tomatoes that are still juicy inside. The amount of time this takes depends on the size of your tomatoes and the amount.
- Add heat – add heat with red pepper flakes, jalapeños, cayenne, and more.
- Add herbs – add in fresh or dried oregano, rosemary, or Italian seasoning.
- Add sweetness – For extra sweetness add in some sugar or a sweetener if low carb.
How To Use These Tomatoes
- Stuff slow-roasted cherry tomatoes in a grilled cheese or top some bruschetta or pizza.
- Add them into salads, lemon pasta, or sandwiches.
- Make them into an intense flavored soup or pasta sauce.
Storage
- Refrigerate – store in olive oil in the fridge for up to 7 days.
- Freeze – Discard the garlic, and lay cooled roasted tomatoes in a single layer on a lined sheet. Once frozen tomatoes, transfer to an airtight container and freeze for up to 6 months.
FAQs
Cooking time really depends on how you want your tomatoes. If you prefer them dry roasted then cook them for a longer time in a large container so the juices to evaporate. If like me you want some juices to slather on your bread then cook them in a smaller baking tin for a lot less time.

Ooooooh, now you are giving me more ideas.
Love me some roast tomatoes! They’re great to bang in the bottom of the oven when you have something else cooking and have cold in cous cous or salad dished for lunch.
Great if, like me, you have them coming out of your ears at this time of year!

Those tomatoes look really good!
Thanks Akaleistar. I think so too.
I am definitely a lover of tomatoes. Growing up in Mississippi, we would always have fried green tomatoes. Still love them. Though, I prefer that they be a little red when frying. Now, I like them roasted in the oven and put into a couscous/fish dish that I prepare. Slow roasted…I haven’t tried but sounds like a new way I might like.
Mmmmmmmmmmmm, fried tomatoes on couscous is a must for me.
Slow roasted tomatoes are like crack to me… I make it all the time and put in in everything! 🙂
A girl after my own heart then =D
I love tomatoes myself – in sauces, on sandwiches, in soups, by themselves, raw, cooked – I don’t know if I’m an addict, but I do love them! These sound wonderful and roasting always improves the flavor of almost anything…
Thanks Javelin Warrior. I am pleased to say I am an addict. =D
