These spicy roasted cashews are a quick and easy snack. Raw cashews are mixed with spices such as cumin and paprika and roasted to crunchy perfection. Served with a cool drink or two, these roasted cashew nuts will be a friend’s and family favorite!

Roasted cashew nuts are one of those quick and easy snacks to throw together for entertaining. They can be a sweet flavor or savoury, spicy or herby or a combination of these if you fancy.

Believe me when I say it is such fun coming up with versions of roasted cashews and Air Fryer Pecans to go with themed film nights.

Anyone who can give me a tip on what flavours would go with Breakfast at Tiffany’s will be my friend forever.

I tend to make this spicy version of roasted cashews as OH prefers spice to sweet. And they smell particularly delicious as guests arrive to a table of lovely drinks and a big bowl of these.

Just make sure that you have enough as the bowl tends to empty as fast as you can fill it.

How to Roast Cashews In The Oven

Roasting cashew nuts, whilst not necessary, makes them go from good to a deeper, richer, nuttier flavour. So definitely try not to skip this step. So lets whip up some Oven Roasted Cashews

  1. Preheat the oven to 140C /160C / 325F / Gas 3.
  2. Season the cashew nuts with herb and spices if you are using.
  3. Spread cashews in a single layer on a rimmed baking sheet.
  4. Roast nuts them for 12-15 min, stirring them twice during that time till golden brown. Keep an eye on them as they can burn quite quickly.
  5. Then transfer them in a single layer to a cool plate and let them cool down for about 15 mins as they get crunchier the cooler the get.

You an make dry roasted cashews easily on the stovetop.

  • Heat a skillet over low heat.
  • Add seasoned nuts into the skillet and dry roast them over low heat, turning them frequency so that they don’t burn.
  • This method is quicker than the oven method and I tend to use it when roasting cashews for myself or when wanting a quick snack.
  • You will end up with a few ‘charred’ marks where the nuts are in contact with the pan, which in my view adds that extra flavour to the nuts.

Pro Recipe Tips

  • This method works for both whole nuts or cashew halves.
  • The toasted cashews will come out soft from the oven but will firm up as they cool down.
  • Vary the spices according to your taste (see more information below). Mix in a mixing bowl before adding to the baking tray or skillet.
  • Here are some of my favorite things to use to make this recipe. How many of these do you have already?

Oh and don’t hesitate to roast double the quantity of nuts and keep some back for yourself to munch on once those lovely guests have all left.

How long to roast cashews?

Depends on how crunchy you like them. At fan-assisted 140 C you should cook nut halves for about 15 minutes making sure to turn them at least twice during baking.

How long do cashews last?

The roasted nuts will last fro about a week in an airtight container.

Where can you buy Cashews from?

You can get smaller amount from you local grocery store. However, for cheaper bulk buys check our local health food stores or order some online.

Delicious Variations Flavouring Roast Cashews

The flavours you choose depend on what you are aiming for or what you like. The simplest flavouring is salt. Everyone pretty much likes salt so use that as a starting point

  • For savoury roast cashews, you can use any combination of garlic, chilli, ground spices like paprika, curry, cumin, allspice and black pepper.
  • You can also use herbs like mixed herbs or more individual ones like rosemary and thyme and even citrus zest, Italian seasoning, Creole seasoning and Fajita Seasoning are great options.
  • Flavoured oils are also good with cashew nuts, eg coconut oil but you would only need to add a little bit as the cashew nuts already have their own oils.
  • You can also have a sweeter more dessert version which can include honey or maple syrup, white or brown sugar, egg whites to add an airy golden crunch. Honey roasted cashews make a great gift for family and friends.
  • Add warm spices – vanilla, sweet warm spices like cinnamon, nutmeg and cardamom, and treat like shredded coconut or sesame seeds are great.

Basically, if you like it, put it on the cashew nuts and try it.

These roasted cashews will make the perfect edible gift. Simply whip them up on the day you will gift them, let them cool down.

Then transfer them to a mason jar before adding your very own homemade with love gift tags. Pretty cellophane bags work too.

Ingredients

  • 2.5 cups (375g) raw unsalted cashews (halves or whole)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander cilantro
  • 1/2 teaspoon ground cumin
  • Salt
  • 1.5 tablespoon oil

Instructions

  • Pre-heat oven to fan assisted 140C /160C / 325F /Gas 3.
  • Line a roasting tray with baking parchment.
  • Combine all the ingredients together in a bowl.
  • Spread out spiced cashews in a single layer on the roasting tray.
  • Roast for about 15 min turning them twice to ensure they are evenly roasted
  • Remove from the oven and transfer to a serving bowl.
  • Now try very hard to keep your hands off them till the guest arrive.
  • Serve and enjoy.

    These turned out fine, however they didn’t seem like they’d have enough spice/p, so I added a pinch of garlic salt and a pinch of chili powder. They were okay, but next time I will add more chili powder and maybe a bit of chipotle seasoning and maybe a pinch of black or red pepper.

  2. I don’t understand how on earth this is supposed to work without using any oil. There is no mention of oil at all. I tried the recipe based on the method trusting that maybe I would be proven wrong and obviously nothing stuck to the nuts at all. Very confused. Real shame cos these look fantastic in principle and I’m trying to find a make at home version of the graze punch chili and lime cashews for which I found the perfect chipotle and lime seasoning mix. Just wish I knew how to make the seasoning stick to the nuts now
