Strawberry season is one of my favorite times of the year, and there are soooooo many ways to use fresh strawberries. Making a strawberry syrup is easy to do and it’s one of the first things that comes to mind when I have strawberries on hand. It can even be made with frozen strawberries so you can enjoy the flavor of summer, even in the dead of winter.
Using strawberry simple syrup to make a sparkling strawberry spritzer is a great way to enjoy a special treat that’s not overly sweet. It tastes like summer in a glass and I can feel good about serving it to my kids.

How To Make Strawberry Syrup

- Add strawberries, water and sugar to a saucepan and bring to a boil.
- Reduce to a simmer and cook for 15-20 minutes or until thickened.
- Strain the mixture through a mesh sieve and store the cooled syrup in a jar.
- To serve, combine 1 part strawberry syrup and 2 parts sparkling water and pour over.
How To Make Instant Pot Strawberry Syrup

- Add the strawberries and sugar into the Instant Pot insert.
- Place the lid on, turn valve to sealing, and set to manual pressure / high pressure for 5 minutes. When done, allow for a complete natural pressure release.
- Then strain the mixture through a mesh sieve and store the cooled syrup in a jar.
- To serve, combine 1 part strawberry syrup and 2 parts sparkling water and pour over.

FAQs
If your strawberries have a high water content the syrup may not be very thick. Once you have strained out the strawberries you can return the syrup to a pan and boil it a little longer to thicken the syrup even more. This removes more water and helps it to thicken more. The syrup will thicken a bit as it cools.
The leftover strawberry pulp can be used in many of the same ways as the syrup. It’s tasty over pancakes or yogurt and I love to mix it into muffins or cake.

- 1 pound (450g) strawberries fresh or frozen
- 2 cups (402g) sugar
- 2 cups (473ml) water for Instant Pot version, reduce water by a half cup
- To serve: sparkling water and ice
