How To Make Sweet Potato Tater Tots

- Preheat the oven to 425 degrees F / 218 degrees C. Grease 2 baking trays with cooking spray or cover them with parchment paper.
- Peel sweet potatoes, cut them into even-sized cubes, and place them in a large microwave safe bowl. Microwave for 5 minutes or until the potatoes are tender. Mash the potatoes with a fork.
- Add salt, pepper, parmesan cheese, garlic, cayenne pepper, and oregano to the mashed sweet potatoes and mix until well combined.
- In a small bowl, combine the breadcrumbs and panko.
- Scoop one tablespoon of the sweet potato mixture and form it into a cylinder, tater tot shape. Coat with the breadcrumb mixture and place on the prepared baking sheet. Repeat until all of the sweet potato mixture has been used.
- Drizzle the tots with oil and bake for 10 minutes. Carefully flip the tater tots and bake on the other side for 10 minutes or until crispy and golden brown.

Lay the prepared tots into an air fryer basket being sure to leave room for the air to circulate. Cook in a preheated 400 degrees F / 204 degrees C air fryer for about 10 minutes, turning halfway through cooking.
