This Tomato Choka is one of the best dips you’ll ever make. It is easy to make, smoky and utterly delicious. Topped off with crunchy fried garlic, this Jamaican style dip becomes the stuff that foodie dreams are made of. Tomato Choka is a versatile dip that is great for serving at breakfast, lunch, dinner, or as a super snackable appetizer.

Suitable for vegan, gluten free, low carb, keto, paleo, and Whole30 diets. Post includes Weight Watchers points.

It is dip day folks, which means it is all about this Caribbean Tomato Choka.

This recipe is such a great way to use up leftover tomatoes. Simply mash them up into this healthier low carb salsa, Trinidadian style, dish. #sogood

It is easy to whip up with a few affordable ingredients and minimal prep. And peeps, it comes together in under 15 minutes.  

It is one of those recipes that is super versatile and can be eaten for breakfast, lunch or dinner. Or just so what I do and serve it up as an appetizer or quick snack on aaaaaaaaaaaaaaaaall the days.

Normally this Caribbean dip is served with roti (a round flatbread) but,

  1. I love, love, love to serve it over pasta as a main meal.
  2. And my kids love dipping into it with crispy tortilla chips.

In case you were wondering…..

What is Choka

Choka is more of a way of preparing food. It is basically ingredients that have been dry roasted (for a unique smokey flavor), before being crushed. Ideally, you want to do this over a smoky bbq, but I am all about easy recipes so I tend to use a broiler or grill pan.

Tomato Choka is normally topped with fresh garlic chunks. But since I am not a fan of chunks of raw garlic, I tend to mellow their flavor by frying them in the oil till they start to turn golden. This makes the garlic nice and crunchy, plus it flavors the oil which makes it taste soooooooooo much better.

Choka Ingredients

This is a base recipe for making Choka, so start with this and adapt to your likening. The ingredients list is just simple everyday things that you likely already have in your pantry or refrigerator.

This recipe uses:

  • ripe tomatoes
  • onion
  • cilantro
  • salt
  • olive oil
  • garlic cloves

How To Make Tomato Choka

  • Preheat broiler, place tomatoes on tray and broil till skin blisters, turning halfway to blister on both sides.
  • Let the tomatoes cool, add them in a bowl and mash with a fork or potato masher.

  • Mix in chopped onions, cilantro and salt.
  • Heat oil in frying pan, add garlic cloves and fry for up to 30 seconds till fragrant.
  • Garlic burns quickly so as soon as fragrant, switch off heat and drizzle the garlic and oil immediately over the Tomato Choka.

Trinidad Tomato Choka Recipe tips

  • While I blister the tomato skins under the broiler, you can blister them on the barbeque or the grill pan for a smokier flavor.
  • Feel free to fry the onions a little before adding them in.
  • Alternatively, you can add in some chopped green onions (scallions) instead for a milder flavor.
  • You can add some chili if you prefer. I tend to add milder chilis to this recipe.

Ingredients

Tomato Choka Ingredients

  • 6 large ripe tomatoes
  • 4 tbsp finely chopped onion
  • 3 tbsp chopped cilantro (coriander)
  • salt to taste
  • 2 tbsp olive oil
  • 3 large garlic cloves

Instructions

  • Preheat broiler, place tomatoes on a tray and broil till skin blisters, turning once to blister on both sides.
  • Let cool, then add tomatoes to a bowl and mash with a fork.
  • Add in the chopped onions, cilantro, and salt.
  • Heat oil in a frying pan, add the garlic cloves and fry for up to 30 seconds, till fragrant. Garlic burns quickly, so as soon as it is fragrant, switch off the heat.
  • Drizzle immediately over the tomato choka and serve.
