Ingredient Notes

For the Salad

  • Spinach – Use baby spinach or regular spinach. You can chop the leaves or leave them whole. Substitute spring mix or your preferred greens.
  • Cherry Tomatoes – Halve cherry or grape tomatoes. If using full size tomatoes, cut them into bite-sized pieces.
  • Peaches – Pit, wash, and quarter fresh peaches. Peeling them is optional.
  • Strawberries – Wash and quarter fresh strawberries.
  • Cheese – Crumbled feta cheese adds a salty contrast to the salad. Crumbled goat cheese or blue cheese also make yummy substitutes.
  • Fresh Parsley – Garnish with fresh parsley or other fresh herbs like basil, mint, or thyme.
  • Sunflower Seeds – Add for crunch. You can also use pepitas, slivered almonds, pecans, or walnuts.

For the Honey Mustard Dressing

  • Olive Oil – Use your favorite light, neutral oil. Avocado oil works well.
  • Mustard – Yellow mustard, dijon mustard, and grainy mustard all work well.
  • Honey – Use raw local honey for the most nutritional benefits.
  • Garlic – Fresh garlic will have a pungent earthy flavor. You can substitute powdered garlic.
  • Lemon Juice – Fresh lemon juice has a brighter flavor than bottled lemon juice. You can also use lime juice.

  • Swap The Fruit – You can swap other fruits if strawberries and peaches aren’t in season. Try nectarines, plums, pears, apples, blueberries, and more.
  • Swap The Dressing – Substitute the homemade honey mustard with any homemade or store-bought salad dressing, such as balsamic vinegar or poppy seed.
  • Add Protein – Serve the salad with protein to make it a complete meal.
  • Add Veggies – Add in cucumbers, red onions, or any veggies you love to eat.

FAQs

Can I Use Frozen Fruit?

Frozen fruit tends to become mushy and watery when thawed. We recommend using fresh fruit for this salad recipe.

Can I Make This Salad Ahead?

You can prep this salad in advance, but there are a few tips to remember. Fruit will begin to break down when cut, so preparing too far in advance will cause the fruit to become mushy. You should also store the salad dressing separately to avoid soggy lettuce.

What Dressing Pairs Well With This Salad?

The homemade honey mustard dressing with this recipe is sweet and tangy and pairs well with this salad and compliment the sweet flavor of the fruit. Poppy seed dressing, balsamic vinaigrette, or a champagne dressing would also serve well.
