This tropical bircher muesli bowl with passion fruit and mango is the perfect summer breakfast.
So, it is summer holidays. And last weekend Freddy took the kids camping. Leaving me alone. Lovely – so glorious to wake up slowly, without any cries of “mama I want to get up or come in your bed or something but please please can we play”. And then the chance to be purely selfish. To make just the breakfast I want, for myself. Oh the joy.
So I read in bed and drank endless cups of tea. I also spent a pathetically looooooong time daydreaming about healthy summer breakfasts. These invariable all involved some of my favourite tropical flavours aka passion fruit, coconut and pomegranate. Luckily, I had all of these in the fridge so it was super easy to pop down, line them all up, before soaking some bircher muesli mix in raspberry juice, ready for my tropical bircher muesli bowl.
Then into a bath. Peeps, is there anything better and more decadent than a lovely bath in the morning, with sunlight streaming in? One hour later, I came down some perfectly soaked bircher muesli. A dollop of coconut yoghurt, along with some dried mango, apricot and passion fruit and bam folks, summer in a bowl breakfast.
(Freddy look away now). I totally ignored the sounds of the campers from the wood over the field. You know the sounds of an exasperated camper trying to get a fire lit while hungry children whine. And knowing that it isn’t my problem. I just sat back, relax, and eat breakfast.

- 150 g (3.5oz) muesli I used Dorset Cereals raspberry and blackcurrant bircher mix
- 275 ml (1.1 cups) raspberry juice
- 3 tbsp coconut yoghurt
- 2 passion fruit cut in half
- Handful of chopped dried mango
- Handful of soft dried apricots
- 4 tbsp pomegranate seeds
- Maple syrup
- Place the muesli into a bowl, add in the raspberry juice, mix well then cover and leave for 1 hr or overnight in the fridge. If refrigerating, then allow to come to room temperature before serving.
- When ready to eat, mix in the coconut yoghurt and serve in bowls.
- Top with the passion fruit, mango, apricot and pomegranate seeds and maple syrup.
