Yeap. This vegan casserole is everything you loooooove about a pasta bake. This dish is full of flavour, thanks to the combination of tangy olives and sweet sun-dried tomatoes. Plus it is easy to assemble and ready in minutes.
To me, cheese is what makes a casserole truly great. And this vegan casserole is packed with all sorts of rich, melty, cheesy goodness. Yeap. Smoky Baked Vegan Pasta Bake is just one of many dishes I have successfully ‘veganised’, and I happen to think it is even better than the original version.

How To Make Smoky Baked Vegan Pasta Bake
- Cook the pasta according to package instructions.
- Preheat oven to 220C.
- Add all ingredients (but only half the cheese) to a large bowl and thoroughly combine.
- Lightly oil a baking dish and then add in the pasta mix.
- Sprinkle on the remaining cheese, spray the top with some olive oil spray.
- Bake in the oven for 25 mins. Remove, allow to cool for a couple of mins, and serve.
Tips for Making Vegan Pasta Bake
- Feel free to change up the seasoning to suit your taste. For example, use your favourite Italian Seasoning mix, or swap the oregano for fresh basil and thyme.
- Want more veggies? Chopped spinach, diced bell pepper or sautéed mushrooms are all great additions.
- And for those who like a little heat, add in some red chilli flakes.
- This works best in a conventional oven as a fan-assisted oven may dry the cheese out.
- Please do spray some olive oil spray before backing for the best results.

Smoky Baked Vegan Pasta Bake
Ingredients
- 500 g (17.5 oz) penne
- 200 g Violife Original grated (divided in half) you can also buy the Original grated or the Original Block and grate it yourself
- 100 g (3.5 oz) coconut cream
- 300 g (10.5 oz) tomato sauce
- 100 g (3.5 oz) olives
- 4 spring onions (scallions) chopped
- 1/4 cup sun dried tomatoes chopped
- 1 tsp oregano
- ½ tsp smoked paprika
- olive oil
- salt
- ground black pepper
Instructions
- Cook pasta according to package instructions.
- Preheat oven to 200C / 400F / gas 6.
- Add all ingredients (but only half the cheese) to a large bowl and thoroughly combine.
- Lightly oil a baking tray and then add in the pasta mix.
- Sprinkle on the remaining cheese, spray the top with some olive oil spray.
- Bake in the oven for 25 mins. Remove, allow to cool for a couple of mins and serve.

Providing vegan recipes that just swap out real cheese for vegan cheese is lazy. Any new vegan could have figured that out.
Not to mention, VioLife is incredibly unhealthy, and well over 70% of vegans eat that way for health reasons. That stuff is about as healthy as margarine.
I was really hoping this was gonna be a legit recipe, as I crave a good baked ziti.
