Veggie burgers are soooooo great for meal prep since they are super easy to make ahead. And they’re really versatile; serve ’em up classic burger style or on top of a nice green salad.

What Are Veggie Burgers?

A veggie burger is a burger patty without any meat. They’re commonly made with beans like soybeans or cannellini beans. You can cook a white bean burger in the Air Fryer, Instant Pot, or fry it up on the stovetop.

Ingredient Notes

  • Beans – this recipe calls for white beans rinsed and drained (I used cannellini beans)
  • Oats – use gluten free oats if following a gluten free diet.
  • Veggies – use red onion or white ones and bell peppers.
  • Seasoning – this burger gets it flavors from Italian seasoning (or oregano), fresh cilantro, cumin, garlic powder, smoked paprika and sea salt. Add little more or little less to taste.
  • Fresh lemon juice and sriracha sauce add a bit of zing and heat to complete this.

How To Make Veggie Burger Air Fryer Style

  1. Mash the beans in a mixing bowl. 
  2. Add in oats, cilantro, onion, bell pepper, lemon juice, sriracha sauce (or tomato sauce), herbs and spices and mix together. 
  3. Divide and shape into 4 patties. 
  4. Preheat Air Fryer to 350 degrees F / 180 degrees C.
  5. Place patties in the basket in a single layer, spray with olive oil or cooking spray and air fry for 9-10 minutes flipping burgers halfway through. 
  6. Create burgers by placing burger patties on buns and adding your favorite toppings.

How To Make Veggie Burgers In Instant Pot

  1. Create burger patties following steps 1-3 from Air Fryer instructions. 
  2. Use your Mealthy CrispLid in Instant Pot and set a timer to cook for 5 minutes.
  3. Open the lid, flip your burgers, close lid and then cook further for 4-5 minutes.

How To Make Fried Veggie Burgers

  1. Create burger patties following steps 1-3 from Air Fryer instructions. 
  2. Heat a pan with a tablespoon of oil on medium heat.
  3. Cook patties until golden brown, turning halfway through cook time.

Recipe Tips

  • Make sure to rinse the beans well and pat them dry well so no excess moisture is added into the patties.
  • Make sure to shape your burger patties so they fit inside your Air Fryer basket. 
  • When cooking frozen veggie burgers, add a few minutes to the cooking time. 
  • You may want to refrigerate your bean burger mixture for 20-30 minutes before you form the patties so the oats can soak up any moisture and the mixture firms up. 
  • Use a measuring cup to make your patties a more uniform size.
  • Thicker burger patties may need a few extra minutes of cook time. `you can always add them back in a a few more minutes if you need to.
  • If you want smoother burgers then feel free to use a food processor.
  • Serve patties with a toasted bun for extra flavor.
  • When Air Frying make sure to leave plenty of space between the patties in the basket so that the hot air circulates and the food cooks well.
  • Air fryers temperatures can vary depending on the make and model. I recommend starting with less cook time, checking for doneness, then adding more time as needed

Recipe Variations

These White Bean Burgers are easily adaptable. Try some of these variations. 

  • Change out the beans – Feel free to use kidney or black beans or instead.
  • Change out the veggies: grated cooked beets, grated zucchini, grated mushroom, grated carrots, grated broccoli, etc. 
  • Change out the herbs and spices: try my blackened seasoning, greek seasoning, shawarma seasoning, creole seasoning for some Southern flavor, or any of my other homemade seasonings
  • Change out the binding ingredient: wheat germ, eggs, egg flax or bread crumbs all work instead of oats.

Change out the beans: black beans, kidney beans, or soybeans.

How Long To Cook Veggie Burger In Air Fryer

Cooking burgers in the air fryer can be a little bit of atrial and error process as each Air Fryer model can cook things at different rates and true temperatures. The length of time it takes to cook your burger in the Air Fryer can vary depending on the make of your Fryer and the size of your patties. 

Start with 9 minutes and go from there. For thicker patties, you may need to add a few minutes and for thinner patties you may need to decrease the time.

Why Does My Burger Patty Fall Apart?

Veggie burgers are an ideal meal prep recipe because they can be easily stored in the fridge or freezer until you need them. I love to make big batches and freeze them to pull out when I need a quick, healthy meal option.

Prep Ahead – Make ahead and refrigerate for up to 5 days in an airtight container.

Freeze – Follow the handy tips below on how to freeze this.

  • Let cool down then transfer into these very handy Ziploc freezer bags.
  • Squeeze out all the extra air and seal the bags.
  • Label the bags and then lay them flat in the freezer.
  • Store in the freezer for 1 month.

Meal Prep – Feel free to make a fair amount of beans and with a few adjustments you can get several meals out of one pot of beans.

Ingredients

  • 14 oz (400g) white beans rinsed and drained ( I used cannellini beans)
  • 2/3 cup (65g) oats
  • 1/4 cup (15g) fresh cilantro finely chopped
  • 1/2 small onion grated or very finely diced
  • 1/2 bell pepper, deseeded preferably grated or very finely diced
  • juice of 1 lemon
  • 3 Tablespoon sriracha sauce or tomato sauce
  • 1 1/2 teaspoon Italian seasoning or oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • sea salt to taste

Instructions
