Baked Chicken Leg Quarters

Budget-friendly baked chicken leg quarters and potatoes are a great all-in-one meal. The perfect recipe for date night at home without a lot of work or expense.

INGREDIENTS

- Chicken leg quarters - Potatoes - Olive oil - Lemon For marinade: - Olive oil - Lemon juice - Italian seasoning - Smoked paprika - Lemon zest - Garlic powder - Salt and pepper

Step 1

Preheat the oven to 425 degrees F or 220 degrees C. Cut the potatoes into quarters and place them on a rimmed sheet pan. Combine the marinade ingredients in a small bowl.

Step 2

Add the chicken leg quarters to the sheet pan, brush the marinade on both sides of the meat and potatoes.

Step 3

Top the chicken with lemon slices and bake for 40-45 minutes, or until the chicken is fully cooked.
