Creamy Orange Mushroom Pasta

Mushroom, orange and pasta lovers this extremely easy, tasty, simple Creamy Orange Mushroom Pasta is for you. It is made with just 8 pantry staple ingredients and perfect for weeknight dinners.

INGREDIENTS

- Gluten-free spaghetti or other pasta - Olive oil - Mushrooms - Rocket / arugula - Orange juice - Milk - Parmesan - Salt

Step 1

Cook gluten-free pasta according to packet instructions and set aside somewhere warm.

Step 2

Heat the oil in a frying pan over medium heat and fry the mushrooms for about 10 mins till soft and starting to caramelize. Add the arugula and fry for a min till it is softened.

Step 3

Then quickly stir in orange juice and milk and cook over medium heat for 1 min till the liquids are well combined.

Step 4

Switch off the heat and stir in the parmesan and season. Mix in the pasta and serve immediately.
