Grilled Scallop  And Balsamic Grilled Peach Salad

Today you have got juicy scallops mixed with slightly tart but sweet balsamic grilled peaches with peppery greens in a salad.  This perfect summer salad. Suitable for Gluten-Free and Paleo diets.

INGREDIENTS

- Peaches - Scallops - Salt - Freshly ground black pepper - Salad leaves - Handful of raspberries - Balsamic vinaigrette

Step 1

Fire up the barbeque until the coals are medium hot. Rub some balsamic vinaigrette on the peach halves and grill for about 2 mins on each side.

Step 2

Remove from the BBQ and set aside. Then season the scallops with salt and pepper, grill on the BBQ for 2-3 mins on each side before removing from the heat.

Step 3

Assemble the salad with the salad leaves, raspberries, scallops, grilled peaches and a drizzle of balsamic vinaigrette before serving.
