Place water and the gelatin in a saucepan and let sit for 5 minutes. Gently cook this mixture over medium-low heat until the gelatin has fully dissolved. Be careful not to boil the gelatin!
Remove the saucepan from the heat and whisk in the green food coloring. Add in the peppermint schnapps and vodka, mixing to combine.
Transfer the jello mixture to a pitcher with a pour spout and fill your cups almost all the way to the top. Cover the shot cups with plastic wrap, then place the baking sheet in the fridge and chill for 4 hours.
