Instant Pot Chicken Tortilla Soup

Instant Pot Chicken Tortilla Soup is an easy dump & go recipe for those busy days when you need a meal fast. You can be eating this delicious pressure cooker chicken tortilla soup in less than 30 minutes.

INGREDIENTS

- Chicken stock - Tomatoes - Cumin - Coriander - Paprika - Oregano - Garlic puree - Jalapeño slices - Chili powder - Salt

Step 1

Add all ingredients to the IP insert starting with chicken stock and add beans and corn last. Don’t mix. Cover your Instant Pot and set the valve to the sealing position.

Step 2

Select the manual or pressure cook button (dependent upon IP model), select high pressure and set the timer to 8 mins.

Step 3

When done let the steam release naturally, open and remove the chicken from the pot. Shred chicken with a fork and add back in to the Instant Pot and mix.

Step 4

Serve your chicken tortilla soup with topping of your choice.
