It’s a traditional Irish dish that combines creamy mashed potatoes and cabbage. This colcannon recipe is ready to serve in less than 30 minutes.
- Water or stock - Potatoes - Head green cabbage - Heavy cream - Salt to taste - Ground nutmeg - Chives
Pour water into the Instant Pot insert and add the cubed potatoes. Add cabbage into an Instant Pot safe bowl or steamer basket and place it on top of the potatoes.
Make sure this bowl is secure and stands upright. Cover and seal the lid and set it to high pressure/manual for 5 minutes.
Let the pressure release naturally for 5 minutes before quickly releasing the remaining pressure. Remove the cabbage, chop and set aside.
Drain the water from the potatoes, then add in the cream, salt and nutmeg, and mash until smooth. Mix in chives and cabbage and serve.
