Easy Jamaican Pumpkin Soup + Instant Pot Version

INGREDIENTS

Vegetable oil Onion Green onions Garlic cloves Minced ginger Ground pimento

Step 1

Heat oil and sauté onions for about 5-7 minutes until soft.

Step 2

Stir in garlic, ginger, pimento, cinnamon, and thyme sprigs and fry for 30 seconds until fragrant.

Add the Jamaican pumpkin, carrot, stock and chili, season to taste, mix well, cover and simmer for 30 minutes until the pumpkin is cooked through.

Step 3

Switch off the heat and stir in the coconut milk.

Step 4

Let the soup cool down, remove thyme sprigs and before puréeing with an Immersion blender.
