Loaded Cauliflower Casserole

Loaded cauliflower casserole is a low carb twist on classic comfort food. Easy to make and ready in 30 minutes, this cauliflower casserole recipe is sure to satisfy!

INGREDIENTS

- Bacon bits - Steamed cauliflower florets - Sour cream - Cream cheese - Garlic powder - Italian seasoning - Black pepper - Sea salt - Cheddar cheese - Monterey Jack cheese - Parsley

Step 1

Preheat the oven to 400 degrees F / 200 degrees C and cut the bacon into bits. Heat a non-stick skillet and cook bacon for 2 minutes.

Step 2

In a large mixing bowl, combine half of the bacon bits, sour cream, cream cheese, garlic powder, Italian seasoning, pepper, salt, half a cup of cheddar cheese, and half a cup of Monterey Jack cheese. 

Step 3

Grease a 9×13-inch baking dish. Add the cauliflower mixture and spread out evenly.

Step 4

 Sprinkle the remaining half of the bacon bits evenly on top of the casserole.

Step 5

Top with the remaining shredded cheese, and bake in the oven for 20 minutes, until the cheese fully melts.
