Mexican Potatoes

This crispy Mexican potatoes recipe pairs tender potatoes with onions and vibrant bell peppers for an easy-baked side dish.

INGREDIENTS

- Potatoes - Red onion - Red bell pepper - Green bell pepper Seasoning: - Olive oil - Paprika - Garlic powder - Cilantro - Sea salt - Ground black pepper

Step 1

Preheat the oven to 400 degrees F / 200 degrees C. Line large baking tray with parchment paper then add the potatoes, onion and peppers.

Step 2

In a small bowl, combine the olive oil with the other seasoning ingredients. Whisk or stir to mix well.

Step 3

Drizzle the oil mixture on the vegetables and toss to coat before spreading the vegetables evenly on the baking sheet.

Step 4

Place the tray on the middle rack of the oven and bake for 35-40 minutes or until the potatoes are fork tender.
