Autumn Pear Bircher Muesli {Vegan, GF}

Lovely autumnal breakfast ideao of over night bircher muesli with pears and berries.

Ingredients

  • 125 g (4.4oz) gluten-free oats
  • 2 tbsp dried fruits of your choice
  • 2 tbsl flaked almonds
  • 250 ml (1 cup) pear juice – left overnight
  • 4 tbsp coconut yoghurt
  • ½ grated pear
  • Handful of raspberries
  • Handful of blackberries

Instructions

  • Place the oats, dried fruit and almonds into a bowl, add in the pear juice, mix well, then cover and leave for 1 hr or overnight in the fridge. If refrigerating, then allow to come to room temperature before serving.
  • When ready to eat, mix in the coconut yoghurt and serve in bowls.
  • Top with the raspberries and blackberries.
