Banana pancakes

Easy banana pancakes that can be whipped up quickly from pantry staples.

Ingredients

  • 115 g / 4 oz / 1 cup plain flour
  • 1 tsp baking powder
  • ¼ tsp sodium bicarbonate baking soda
  • 1 tsp cinnamon or to taste
  • ¼ tsp grated nutmeg or to taste
  • Pinch of salt
  • 2 eggs
  • 160 ml milk 3/4 cup
  • 2 bananas mashed
  • Honey to taste optional

Instructions

  • In a large bowl add flour, baking powder, sodium bicarbonate, cinnamon, nutmeg and salt and mix thoroughly.
  • Add in the eggs, milk, mashed banana and honey (if using) and mix with a fork.
  • Do not over mix it, stop when the ingredients are combined.
  • You will be left with a thick batter. It does not matter if there are a few lumps in the batter.
  • Heat a non stick frying pan over medium heat.
  • Melt the tiniest knob of butter in frying pan and add in a ladle of batter.
  • Cook the pancake for a couple of minute and when the top starts bubbling then turn over and cook the other side till it is golden.
  • Serve with maple syrup, nuts or any other toppings that you prefer.

Notes

For meat eaters you can serve this with streaky bacon or spice sausage.
