Almond Waffles with Maple Roasted Apricots

Breakfast treat - almond waffles with maple roasted apricots

Ingredients

  • 450 ml (1.9 cups) almond milk
  • 125 g (4.4oz) unsalted butter melted
  • 3 eggs beaten
  • 1 tsp vanilla extract
  • 250 g (10.5oz) self-raising flour
  • 50 g ground almonds

For the maple roasted apricots

  • 8 apricots halved and stoned
  • 3 tbsp maple syrup
  • 1/4 tsp vanilla extract

To serve:

  • Whipped cream
  • Fruits
  • Maple syrup

Instructions

  • To make the maple roasted apricots preheat oven to fan-assisted 180C / 200C / 400F / gas 6.
  • Mix the apricot halves, the maple syrup and vanilla, transfer the mixture to an oven tray and roast for about 15 mins until the apricots are tender and starting to char on the sides.
  • Remove from the oven and set aside
  • Make the waffles by whisking together milk, butter and eggs and set aside.
  • Mix flours in a large bowl and make a hole in the centre.
  • Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are some lumps.
  • Cook the waffles according to your wafflemaker instructions.
  • Repeat until all the mixture is finished.
  • Serve topped with some cream, the roasted maple apricots and extra maple syrup.
