Plantain Waffles - Sierra Leone Flavours

Deliciously nutmegy plantain waffles.

Ingredients

  • 1/2 tsp baking powder
  • 1/2 tsp ground nutmeg (or to taste)
  • 2 eggs beaten
  • 1 large ripe plantain , peeled and mashed
  • 2 tbsp maple syrup

Instructions

  • Switch on waffle maker and dial up to the brown setting you desire.
  • Preheat waffle maker.
  • Mix the flour, baking powder and nutmeg in a large bowl and make a hole in the centre.
  • In a different bowl, whisk together milk, eggs and butter before adding in the mashed plantain and maple syrup and combining thoroughly.
  • Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are a few lumps.
  • Pour half a waffle measure cup of batter into each waffle well, close lid and cook until timer has finished and beeps three times.
  • Repeat until all the waffle mixture is finished.

Notes

I prefer the brown setting of 4 for these waffles.
